CARELESSNESS.
Some one dropped an orange peel
carelessly upon the walk, little reeking
that some heel, stepping there, would
cause a shock. Some one else came
blithely down, full of happiness and
cheer, then he slid all over town and the
suburbs on his ear. Then for seven
months, about, on a couch of pain he
lay, and the language he put out made
the nurses turn away. Thus we see his
moral state underwent an awful shock,
all because some trifling skate dropped
a peeling on the walk. Some one drop-
ped some carpet tacks on a quiet thor-
oughfare where the autos make their
tracks when the days are bright and
fair; then a load of idle rich down along
that highway tore; still I hear the rau-
cous pitch of their voices as they swore,
Sorrow then succeeded mirth in the
twinkling of an eye, and the men folks
pawed the earth, and the girls sat down
to cry. Some one idly threw a brick at
a passing butterfly, and it made a neigh.

Canada's fire loss during January amoun-
ted to $3,913,385, compared with Dec-
ember loss of $1,769,905, and $3,002,650
for the corresponding period of last year.
The following is the estimate of the
January losses: Fires exceeding $10,-
000, $1,921,506; small fires, $1,481,438;
estimates for unreported fires, $510,-
441; total, $3,913,385.

immigrants arrived in Canada, made up
of 130,509 British, 118,826 from the Un-
iteh States, and 95,648 from all other
countries combined. The figures for the
corresponding rr onths of lrst fiscal year
are: British, 121,661; from the United
States,111,706, and from all other coun-
tries combined, 67,338, giving a total
for the ten months, April 1 to Feb. 1,
of the fiscal year 1911-12, of 300,705.
Percentages of increase are: British, 7
p,'r• cent; American, 6per cent; others 42
per cent,

For Smoking Meat.
This novel and simple method of
smoking ham is given by a correspond-
ent of the American Agriculturist:
The old smokehouse method of smok-
ing meat is now considered too slow
and bothersome. I have found the fol-
lowing method very satisfactory. It
especially recommends itself for quick-
ness, cheapness and effectiveness. I
have kept meat treated by this process
through an entire season.
Bore a one -inch hole in the bottom of
a barrel. Invert the barrel and hang a
piece of meat through the hole by a
looped wire. Then pass a small stick
through the loop to hold the meat in
place. Next scoop out a shallow basin
in the ground. This should be a little
smaller than the barrel. Build a smol-
dering fire of chips or cobs in the shal-
low basin. I prefer cobs. The place
barrel and the meat over the fire, leav-
ing a small opening at the ground to
form a draft. By this method you can
smoke meat to perfection in a very few
minutes, If several pieces are to be
smoked a number of barrels can be op-
erated at the same time with satisfac-
tory results. A constant watch should
be kept during this process,

Cranberry cut in cubes makes a very
pleasing garnish for cold turkey or
chicken.
Cranberries like lemons, can be kept
for some time if put in a vessel con-
taining cold water, which should be
changed every day.
Either peel onions under water or let
them stand in water for a while before
peeling, if you want to prevent eye
smartness.
Frozen fish should be used as soon as
it is thawed, for it spoils far more
quickly than fresh fish. The best way
to thaw fish is to put it in cold water. •l1.
To insure the measurements in cook- *-

same cup for measuring all ingredients
in preparing any special dish, as a cake
or pudding.
