Leftover anything can be
reheated in minutes, so you
needn't stick to just sand-
wiches anymore. If there is
a microwave at your
school or place of work,
brown -bagging on Monday
can include cold pizza from
your weekend party. Left-
over.easseroles, or canned
chili or soup can be trans-
formed into a hot lunch
within minutes.
The time -saving miracle
of microwaves is really ap-
preciated when, as for
most of us, there is a limit-
ed amount of time for
lunch. And what a money -
saver! There's no need to
go to a restaurant anymore
for a hot lunch, when you
can spend less time and
money making your own.
If you have no leftovers
to warm up, try a hot toast-
ed cheese sandwich. Just
toast two slices of bread in
your toaster, butter, and
place cheese in the middle.
Heat on a napkin for 20
seconds (wait a minute be-
fore eating, as cheese will
be very hot) and serve with
fruit for a quick and easy
lunch.
Or heat up a hot dog in a
mere 25 seconds.
There's no longer any
reason to suffer along with
cold peanut butter sand-
wiches, when your mi-
crowave oven can make
lunch a real meal. Here are
some more ideas!
HOT BOLOGNA
SANDWICH
1 slice of bread,
toasted
Mayonnaise
Mustard
2 slices of tomato,
1 -inch thick
1 slice processed
American cheese
1 slice bologna
Spread toasted bread
with mayonnaise. Add bo-
logna, and spread thinly
with mustard. Top with to-
mato slices, and then
cheese. Microwave for 35-
45 seconds, or until cheese
melts and bubbles. Makes
one open-faced sandwich.
QUICK QUESADILLA
1 flour tortilla (about
8 inches in diame-
ter)
2 tbsps. sour cream
2/e cup shredded jack
cheese
Y2 small tomato,
chopped
Chopped chives to
taste
Lay tortilla on a plate
and spread with sour
cream. Sprinkle cheese on
one side, then add tomato
and chives. Fold tortilla m
half, place plate in mi-
crowave for 30 seconds,
until cheese bubbles
around edges. (Other fill-
ings such as chopped black
olives, cooked leftover
meat, refried beans, etc.
may be added to the quesa-
dilla.) Serve with salsa, if
desired. Makes one quesa-
dilla.
POCKET CHILI FOR 4
4 pita breads
1 can chili con carne
with beans
Shredded cheddar
cheese
Chopped onion
Split pita breads to make
a pocket. Fill with chili con
carne, and then add cheese
and chopped onion. Heat
each individually on paper
plate for one minute or so.
REUBEN
ON A MUFFIN
Cooked sliced corned
beef
1 English muffin,
split and toasted
lightly
2 tbsps. mayonnaise
1 cup sauerkraut
2 slices Swiss cheese
Place muffin halves on a
plate. Spread each with
ma.}'ihnaise, then top with
sliced corned beef. Add
sauerkraut, then Swiss
cheese, and microwave for
45 to 50 seconds, or until
cheese melts. Serves 1 or 2.
