THE MANY FACES OF YOGURT Yogurt is growing in popularity among the dairy products. It is,prepared from whole or partially skimmed or skim milk, providing good flavour and nutrition. The two types are the "regular" and the "Swiss-etyle". Home-made yogurt falls into the "Swiss -style" category. Yogurt may by plain or flavoured and, depending on the variety, may provide 112-170 calories for a six -ounce serving. 11 keeps well in the refrifierator, 3-5 days for the "regular" type and about 2 weeks for the "Swiss -style ', However, check the label for the recommended "best before" date. Yogurt can be eaten as is for a snack or dessert; it may be blended with fruit juices, substituted for, sour cream or buttermilk in baked producta, added to salads, used as a dip for chips or vegetables, and mixed with cottage cheese, jams and jellies- In short, yogurt can add to the moat simple dish.
