The long, slow simmering of food known for centuries has been revived by this electric appliance). A tempera- ture dial gives low and high settings and many have an automatic setting which allows the cooker to start at high and then switch to low. The low setting produces a temperature in the range 01 170 - 200 F, and the high will reach temperatures of up to 280 F. These are well abouve the unsafe temperature range of 40 - 120 F.
