oing bananas

We take the banana pretty
much for granted. After all,
they're available all year
round and they're one of the
least -expensive fruits in the
supermarket.
But things haven't always
been that way. Around the
time of the Civil War a few
blackened bananas, might
reach American markets,
but there were no regular
shipments from the tropics
and the fruit was rarely
seen. A single bedraggled
banana, wrapped in tinfoil to
mask its waning beauty,
could sell for as much as $1,
big bucks in those days.
Then, in the latter years of
the 19th century, a New Eng-
land sea captain named Lor-
enzo Baker began regular,
and lucrative, shipments of
the fruit. But it was not until
the mid -1920s that bananas
could be found in markets
nationwide. It was then that
refrigerated, ships and rail-
road cars came into use —
the banana became a com-
monplace sight and lost its
exotic appeal.
While it may not be quite
as exotic as it once was, the
banana is still a great favor-
ite with fruitlovers. Sliced
into a bowl of cereal, packed
in a brown -bag lunch or nib-
bled as a snack, they're
sweet and provide healthy
amounts of vitamins C, A
and Bl. And ripe bananas
are very easily digested.
When shopping, choose
fruit which is firm and un-
blemished. Single bananas
deteriorate more quickly, so
if they're popular in your'
household, it's best to buy by
the bunch. Bananas should
ripen at room temperature
— never in the refrigerator.
What to do if they ripen be-
fore you're ready to use
them? Just mash the ripe
fruit with a fork, store in a
small container and freeze.
(Three medium bananas will
male one cup mashed.)
Then thaw for a couple hours
before you're ready to use
the pulp in baked muffins,
banana bread, etc.'.
Following are several
microwave recipes you'll go
bananas over!
ten. Combine rum and
liqueur in glass measuring
cup; heat 25 seconds. Pour
over bananas and ignite;
then spoon flaming sauce
over bananas until flames
subside.
Servejaananas over scoops
of ice cream.
Makes about 6 servings. ,

cooked on HIGH (100 per
cent power) and uncovered
unless otherwise specified.

Bananas
Chocolate chips
Miniature marshmallows
Salted peanuts
Peel banana skins back,
leave skins attached at base.
Split each banana lengthwise
to make a pocket. Fill pocket
with chocolate chips, marsh-
mallows and peanuts. Re-
place skins, fasten with
wooden picks.
Place bananas on serving
plate, cook two banana boats
about 4 minutes, four about 8
minutes.
BANANA CAKE
"2 cup butter or margarine
11/2 cups sugar
3 eggs
I'cup mashed bananas
1 tsp. baking soda
'/2 cup commercial sour
cream
2 cups all-purpose flour
1 tsp. vanilla
Cream butter or margar-
ine, stirring sugar in gradu-
ally.
Separate eggs. Beat egg
yolks and stir into sugar
mixture. Mix bananas into
sugar mixture.
Combine baking soda with
sour cream. Stir sour cream
mixture alternately with
flour into banana mixture.
Beat egg whites until stiff.
Fold in egg whites and vanil-
la.
Pour batter into two 9 -inch
round glass cake dishes.
Bake each layer 6 minutes in
microwave. Tutn dish every
minute. Cool.
Makes 2layers.

course, but it's hard for you

your vertical writing, caus-

ers are likely to consider.

3 tbsps. butter or margar-

3 tbsps. firmly packed
brown sugar
Dash ground nutmeg
1/2 tsp. grated orange peel
4 firm -ripe bananas, peel-
ed and sliced "2 -inch thick.
2 tbsps. each rum and cof-
fee -flavored liqueur
About 11/2 pts. vanilla or
coffee ice cream
In shallow 1'/2 to 2 -quart
serving dish, melt butter or
margarine in microwave 1 to
2 minutes or until bubbly.
Stir in sugar, nutmeg and
orange peel.
Cook, uncovered, 2 min-
utes to dissolve sugar; stir
well. Add bananas, stirring
lightly to coat with butter
mixture.
Cover and cook 2 minuteh
or until bananas begin to sof-
