M7 -A4 Hydrogen bonding By PHYLLIS WEAVER In cold weather, bursting water pipes are a constant threat, even if the pipe is one made of steel: Everyone knows that hot water expands and cold water contracts and gets denser, right? True, to a point. When water cools below 39 degrees Fahrenheit, it starts to ex- pand again. So at the freez: ing point, or at 32 degrees Fahrenheit, water is not as dense, and as it freezes, it expands by a large amount, just as when it is heated. Water, composed of two hydrogen atoms to each oxy- gen atom, is held together chemically by "hydrogen bonding" (among other forces which hold water to- gether). To boil, water must be heated to 212 degrees Fahrenheit to overcome this hydrogen bonding force. Likewise, when the water temperature is reduced, ef- fects of hydrogen bonding become stronger. At 39 de- grees, water molecules form a kind of crystal structure, which expands the, water and the pipes, which then have nowhere to go but out.
