Yes, you can
microwave rice

Can you really microwave
rice'? Sure, you can. It's just
that many people prefer to
cook rice the conventional
way, since there's really no
time saved by microwaving.
Rehydration of the grain
takes time, no matter what
cooking method you use. The
main microwave advantage
is that you can cook and
serve in the same dish.
Since mircrowaving
doesn't really save you any
time, you may want to cook
rice on the stovetop and
leave the microwave free for
other dishes.
I like to use the microwave
when I just want some plain,
cooked rice for use in a
recipe. To microwave com-
bine 1 cup long grain rice, 21/4
cups water, and 1/2 teaspoon
salt in a 3 -quart glass cas-
serole. Microwave at HIGH

which gives you 10 minutes
to microwave another dish
while "standing tim
finishes cooking your rice:
Combine 1 cup long grain
rice and ',2 teaspoon salt in 3 -
quart casserole. Pour 21/2
cups boiling water over rice.
Cover and microwave at
HIGH (100 per cent power)
- for 7 minutes. Then let stand,
covered, 10 minutes before
serving.

MEXICAN RED RICE
' 4 cup olive or vegetable oil
1 medium onion, chopped
1 small green pepper, diced
1 cup raw long grain white
rice
'/4 tsp. salt
1/4 to 'i2 tsp. chili powder
(optional)
2 medium ripe tomatoes,
peeled, seeded and
chopped
2 cups boiling water
Combine oil, onion and
green pepper in 1 -quart glass
casserole. Cover and
microwave on HIGH (IOO per
ent power) 6 minutes,

in the fridge up to one week

For years, those of us. with
children growing up in the
'70's and '80's (those of us
who still have all our mar-
bles, that is) have. been try-
ing to break the code of com-
munication. It would have
been easier to break into the
computer bank of American
Express.
Something happened dur-
ing those years that separat-
ed parents from their chil-
dren by language. We all
talked, but we didn't under-
stand one another.
A mother from Missouri
has made possibly the big-
gest breakthrough in years.
She says it's all semantics.
"If I say, 'Living with one
another without marriage is.
living in sin,' I'm put down
as archaic. On the other
hand if I say, 'Such an ar-
rangement is not truly
meaningful because it takes
no real commitment,' I am
listened to."

"relationship," a knock-

red to as a "confrontation of
special needs" anda woman
who cleans her own house is

A few years ago, we_ha. a__
—'kid living at home who had
no curiosity whatsoever
about money or where it

mention the word job. He
looked at us like we were
speaking another language. I
approached him one day in
the kitchen with a limited vo-
cabulary of his generation.
"So, how are you coming
at mainstreaming your tal-
ents?"
For the first time ever he
did not run away. "Is there a
problem?" he asked.
- "I just noticed your con-
spicuous consumption of
food has peaked and your ag-
gression level is on over-
load."
He studied me for a
moment. "Actually, I'm in a
selection process."
"Is it soen"efhing you'd -like
to share?"
"There was an ad for a
street construction job, but it
wasn't meaningful."
"Fulfillment without
gratification is just the tip of
the iceberg," I said.
"Boy, isn't that the truth.

be we would have had a bet-
ter relationship with one
another. I'm going to try
what you said."
I would have given any-
thing to know what I had just
said.

"Atlantic Wildflowers"
is
a botanist's 'paradise, for it
contains glowing color pic-
tures of 129 plants growing in
Atlantic Canada. Under each
picture is the common name,
the scientific name, the
height, uses of the plant, the
flowering time, ' and other
data. Each plant occupies an
entire page. While the plants
are not arranged alphabetic-
ally, there are at the end of
the book two alphabetical
lists, one by the scientific
name, the other by the com-
mon name.
Most of the plants are
shown with a background of
other foliage, which is some-
times confusing, as in the
case of the dandelion, which
is generally found growing
on lawns and consequently
stands out by itself.
' Most of the plants are not
limited to Atlantic Canada
but can be found elsewhere.
Under each photograph is a
statement of the range of the
plant. Some are to be found
in British Columbia, some in
California.
