MICROWAVE MAGIC
Modern
marvels

We live in an amazing age.
I was browsing through an
antique shop not long ago
and it really hit me. For sale
was a battered washboard
and tub, a hand -operated ice
cream maker, a wooden ice-
box.
You can still hear Grand-
ma and Grandpa refer to the
refrigerator as an "icebox".
They actually grew up with
wooden boxes that held a
chunk of ice to keep the food
cold. Gads! They made ice
cream by turning a crank
until they got an early ver-
sion of tennis elbow.
Did Grandma have a
blender? Fat chance. She
probably whipped things up
with a rotary beater. No
Cuisinart to chop the
veggies, no electric can
opener and a stovetop perco-
lator instead of a Mr. Coffee.
How did she do it?
If you think you've got it
rough, just look around you.
We're living in the Golden
Age of Convenience. How
many of us would survive
without air conditioning and
telephones? We've got
electric hair dryers, curlers,
toothbrushes, washing
machines, dishwashers,
vacuum cleaners. Not to
mention stereos, color TVs,
cars, home computers, etc.,
etc. Pocket calculators and
digital watches are given
away with magazine sub-
scriptions these days.
There aren't many kit-
chens that don't have a com-
mon toaster on the counter.
But the gadget is just be-
ginning to make its ap-
pearance in the average
Russian household. The
Soviets recently opened sev-
eral new factories to produce
this new (to them) household
appliance. One wonders how
many comrades can heat up
their borscht in the micro-
wave?
SPICY GLAZED
PEACHES
1 (16 oz.) can peach halves
1/2 cup brown sugar
1/4,13sp..ground cinnamon •
Dash ground nutmeg
3 tbsps. butter
Arrange peach halves, cut
side up, in rectangular glass
baking . dish. Mix brown
sugar, cinnamon and nutmet
together in small bowl.
. Spoon equal portion into'
center of each peach half.
D.ot with butter. Pour juice
remaining in can into bottom'
of baking dish. Microwave
for 3 to .4 minutes, or until
butter is melted. Spoon
.liquid from dish over
peaches in serving dishes.
Serves.4 to 6.
DELUXE
CHICKEN CURRY
1 cup boiling water
1/2 cup shredded coconut
1 large onion, sliced into
rings
1 cup chopped green pepper
1 clove garlic, minced
1 tbsp. cornstarch
•
2 tsps. curry powder
1/4 tsp. each salt and ground
ginger
Dash pepper
1 (3 lb.) chicken, cut in serv-
ing pieces
2 apples, cored and thinly
sliced
1 (10 oz.) pkg. frozen peas
I/4 cup raisins
Place coconut in small
bowl; pour boiling water
over coconut and let stand 5
minutes. Drain, reserving
coconut liquid. Pour liquid
into shallow, round, 2 -quart
glass baking dish. Add onion,
green pepper and garlic.
Microwave, uncovered, 1
minute. Stir, and microwave
1 minute longer. Stir in corn-
starch, curry powder, salt,
ginger and pepper, mixing
well. Place chicken in dish,
with meatier pieces toward
outside, spooning sauce over
chicken. Cover and micro-
wave 10 minutes. Add ap-
ples, peas, raisins and re-
served coconut; stir well.
Cover and microwave 10
minutes longer; let stand 3 to
5 minutes before serving.
Serve over rice to 4.
MUSHROOM -STUFFED
BEEF ROUNDS
11b. ground beef
1 egg, beaten
1 slice bread, torn into small
crumbs
1 tbsp. Kitchen Bouquet
2 tbsps. ketchup
1 tsp. dried parsley flakes
1/4 tsp. each salt and pepper
1 (4 oz.) can mushroom
stems and pieces, drained
1 cup shredded Swiss cheese
1/4 cup minced onion
Dash ground thyme
In bowl, combine beef,
egg, bread crumbs, Kitchen
Bouquet, ketchup, parsley
flakes, salt and pepper. Mix
well, and set 13 of the mix-
ture into four Pyrex custard
cups, using back of spoon to
form shell in each cup. In
small bowl, combine mush-
rooms, cheese, onion and
thyme. Place equal amount
in each cup, then top with re-
maining meat mixture,
sealing, at edges. place cups ,
in ring in oven and micro-
wave, uncovered, 8 to 10 ..
minutes. Let stand 5 minutes
before serving.
Serves 4.
