cooking?
TURKEY BUFFET CASSEROLE
4 ounces medium wide noodles (2 cups)
1 package frozen broccoli spears
3 tbsp. butter or margarine
3 t sp, flour °
1 tsp. salt
1/4 tsp. prepared mustard
1% tsp, pepper
2 cups milk
1 cup (1/4 Ib.) grated cheese
2 cups cut up turkey
1/2 cup slivered toasted almonds
Cook noodles in boiling salted water until
tender. Drain. Cook broccoli as label directs
until just tender. Drain.
Dice broccoli stems, but leave flowerets whole.
Meanwhile, in saucepan over low heat, melt
butter, stir in flour, salt, mustard, pepper and
milk. Cook, stirring constantly until thick and
smooth. •
• Remove from heat and stir in cheese until
melted. In grease shallow casserole arrange
noodles, broccoli flbwerets on top, pressing them
-lightly into sauce. Sprinkle with almonds.
Bake, uncovered, at 350 degrees for 15 minutes
or until bubbling hot. Yield: 4-6 servings.

RANCH STYLE BAKED BEANS
2 tbsp. butter or margarine
11b. ground beef
Lenvelope onion soup mix
1 cup catsup
1/2 cup water
2 1-1b. tins pork and beans in tomato sauce
1 1-1b. tin kidney beans, drained
2 tbsp. prepared mustard
2 tsp. cider vinegar
Preheat oven to 400 degrees.
Brown meat in frying pan and stir in other
ingredients. Pour into 21/2 qt. bean pot. Bake for
30 to 40 minutes until hot.

DUCKLING ALSATIAN
(Makes 8 servings)
2 ducklings, 4-5 pounds each
Soy sauce
salt and pepper
1 teaspoon ground caraway seed
1/2 pound bacon, diced
1/2 cup chopped onion
1 teaspoon whole caraway seeds
2 cans (1 lb. each) sauerkraut
1 cup white wine
2 medium apples, peeled and cored
1/4 cup brown sugar
1 large potato, grated
1 package (1 Ib.) breakfast pork sausage
8 apples, cored but left whole and unpeeled

Thaw ducklings in refrigerator for two days, or
under cool water for several hours.
Preheat oven to 350 degrees F.
Remove neck and giblets from , ducks. Trim
back -neck skin and removt excess leaf fat. Rub •
outside skin with soy . sauce. Sprinkle inside
cavities with salt, pepper, and ground caraway
seed. Scratch breast of ducklings with sharp fork
,to assist self -basting process.
Place on a rack in a shallow baking pan and
roast 21/2-3 hours.
Meanwhile, in a large, heavy skillet or Dutch
oven, saute bacon and onion until golden. Add
whole caraway seeds, then sauerkraut and wine.
Grate 2_ peeled apples intothe mixtureand
cook over medium heat for 45 minutes.
Add brown sugar and potato. Stir well, and
cook 15 minutes longer.
Pan fry sausages to a golden brown.
Peel flower ends of remaining apples down
about finch and place in a 13 x 9 x 2 -inch baking
pan, ` peeled end up.' Bake 40-60 minutes,
depending on size of apples, or just° until tender.
Every ten minutes during baking time, press on
the peeled end .with a fork and. sprinkle with
sugar and .cinnamon.. .At .the end of the baking,
the top will beflat and .the core hole filled with
pressed apple •
At serving time, place ducklings on a large
oval platter, and surround with • sauerkraut.
Garnish kraut with sausages and place apples

Questions officer's productivity

Reeve Eileen Palmer
suggested to town council
Monday night that
Goderich may not be
getting all the mileage it
could from county
development officer
Spence Cummings and
may want to consider
hiring its own officer.
Palmer, commenting
on a report to council
from the--acon. mic
development committee,
questioned the produc-
tivity. of Cummings. She
said the development
officer is hired by Huron
county and as suc!:i works
for all . municipalities in
the county. She said she
felt he was "not doing
much for the town of
Goderich".
Shesaid the economic
development committee
had not been very suc-
cessfull of late- attracting
any industry to Goderich
adding the town may
want to look into the
prospect of having its
own development officer.
Dave Gower, chairman
of the development
committee, defended
Cummings pointing out to
council that he was an
active member of the
town's committee. Gower
said it was tough to to
"effectively guage" the
efforts of any one com-
mittee member.
He told council that
selling industry on the
merits of locating in
Goderich was not ' con-
fined to one group or
individual. He said the
mayor, clerk, com-
missioner of works and
chairman of the
development committee
were all awnsering
enquiries about the town.
He said all were actively
promoting Goderich
when the opportunity
arose.
Gower .added that the
economic development
committee was doing
more than promoting
industry. , He said the
original' mandate given
the committee was to
attempt to develop an
industrial base but that
had expanded into
commercial development
and housing.
