HomeMy WebLinkAboutThe Goderich Signal-Star, 1979-11-08, Page 43BREADED CHICKEN BREASTS IN CREAM 4 or 6 chicken breasts boned, pounded to 1/2 -inch thick 11/2 cups fine bread crumbs 2 beaten eggs 1 tsp. tarragon 1/2 tsp. garlic 1 tsp. thyme 21/2 tsp. salt 1/4 cup butter 1/2 tsp. paprika 2 cups cream. Mix bread crumbs, spices, dip chicken in beaten eggs, then coat well in crumb mixture. Add butter to large fry pan (I use a cast iron pan) brown well on both sides, add cream an' 1 simmer covered for 15 minutes or until tender_ Serve with green beans almondine-fresh or frozen green beans (cook if fresh). Roast slivered almonds in butter in high oven until gold. Pour almondsyarid drippings (if any)" over beans. Serve on hot'platter. Put potatoes around meatand sprinkle with sugar. Reduce heat to low and cook for about 1 hour, turn, and arrange pineapple slices over ham and pour juice over all. Turn potatoes in liquid and cook 30 minutes more. Serves 6. Earleen Spain. Goderich HAM BALLS AND MUSTARD SAUCE 1 lb. smoked ham ground 11/2 lb. pork sausage ground (I get butcher to grind them together) 2 cups dry bread crumbs 2 eggs 11/2 cups milk Roll into balls and put on sauce and baste the following. 1 cup brown sugar 1 -teaspoon dry mustard 1/2 cup brown vinegar 1/2 ,cup water Bake at 300 degrees for 2 hours. Serves 12 or more, MUSTARD SAUCE 3 egg yolks 2 tablespoons of water one-third cup vinegar. Beat well. Add to egg mixture: % cup prepared mustard (the kind in the jar) 1 tablespoon of butter or margarine 1/2 cup of sugar 1 teaspoon of flour 1/2 teaspoon of salt Cook and stir continually until thick. This is really my favourite recipe for Christmas and it is very enjoyable to have at anytime, but it is easy to make. Earleen Spain Goderich f Page 9 CITY CHICKEN 2 pounds steak (round) cut into 1 inch x 11/2 inch cubes. 2 pounds pork shoulder cut into 1 inch x 11/2 inch cubes 1 cup seasoned flour 11/2 cup dry bread crumbs 1 10 -oz can condensed cream of chicken soup 1 egg 1/2 cup milk 4 tblsp. vegetable oil 1/2 cup chopped onion 1 cup water - Arrange beef and pork alternately on wooden skewers. Press the pieces close together into the shape of a chicken drumstick. Roll the meatin seasoned flour. Beat egg and milk to combine.Dip the meat into egg mexture, then roll in bread crumbs.,,' Brown the meat in hot oil in a frying pan. Combine remaining ingredients. Transfer meat to an ovenproof dish, pour in soup mixture and cover. Bake in a 350 degree oven for two hours or until tender.
