You
and your health (unit)
Christmas is coming, and it's time to think about
preparing all those goodies safely.
Did you know that mild cases of indigestion after
Christmas dinner may not be indigestion at all but
rather be a case of food poisoning?
Food poisoning is much more common than is
reported simply because people don't recognize it.
What should you beware of? Read on.
The main culprit is the Christmas turkey. Raw fowl
carries a bacteria called salmonella. It causes the
most common type of food poisoning, and it can be
prevented by proper handling. Cooking of the turkey
inactivates the salmonella bacteria so that it doesn't
harm us. So how are the problems caused?
Placing the raw turkey on a surface that you use'for
other foods will cause the surface to become infected.
Then if you chop some coleslaw on the same surface,
the salmonella bacteria is transferred to it. Or, if the
cooked turkey is placed back on the surface it con-
taminated when raw, it will become re -contaminated.
So be sure to clean the surfaces very thoroughly
after raw fowl has been on them. Use hot, soapy water
or better still, Javex. And of course be sure to wash
your hands thoroughly after handling raw fowl.
Don't stuff a turkey ahead of time. It may seem like
a time-saver, but the dressing will be contaminated.
And being inside the bird delays cooking, making an
environment that is perfect for salmonella bacteria to
multiply in.
-The problem could even begin during thawing.
Turkey should always be thawed in the refrigerator or
in a sink full of cold water. Never thaw it at room
temperature. This can be a problem•around the festive
season, when the space in the refrigerator seems to be
full to the bursting at all times.
Other foods should 'be handled carefully during the
Christmas season too. With fridges overloaded, it's.
easy to leave things that you would normally
refrigerate out on the. counter. Don't.
Try not to overload the fridge. If there are too many
things in it, cooling will take longer, and the fridge
may not be able to keep the temperature down where
it should be.
Watch those large family dinners. It's so nice to just
sit around after over a cup of coffee. But for safety's
sake, jump right up and get those foods that need it
into the fridge. The things to be most careful of are
meats and things made from meats (dressing, gravy)
and dairy products and any dishes made from them.
Also beware of foods containing mayonnaise.
' Sticking to these few rules and using your own
common sense will make your Christmas season all
the more enjoyable. Merry Christmas!
