CHEESE BLINTZES
o make a fuss over
Cheese Blintzes are a delightful way to serve cottage cheese. Tender
crepes are wrapped around a delicately spiced cottage cheese filling and
served with.•a Strawberry Rhubarb Sauce or any fresh fruit. Very nice for
an evening snack or at a leisurely company brunch.
Batter
Two-thirds cup all-purpose flour
1/q teaspoon salt
1 tablespoon sugar
4 beaten eggs
11/2 cups milk
2 tablespoons butter, melted
Butter for frying
Mix dry ingredients. Add combined eggs and milk
and beat until smooth. Stir in melted butter.
Refrigerate 2 hours. Heat enough butter in a heavy 7 -
inch ' frying pan to coat lightly. Pour in 2 to 3
tablespoons of batter and tilt to spread evenly in thin
layer. Cook over medium heat, on one side only, until
top is dry and blistered (1 to 2 minutes). Turn out,
browned side up, on clean cloth and cool. Repeat until
all batter is used.
Filling
2 cups cottage cheese
1 egg yolk
2 tablespoons sugar
Dash salt
1 teaspoon grated lemon rind
1/s teaspoon cinnamon
1 tablespoon butter
Press cottage cheese through sieve. Add remaining
ingr'edients and mix well. Place about a tablespoon off
filling on browned side of each pancake. Fold in op-
posite sides and roll up. Place on greased baking pan,
brush with melted butter and bake at 400 degrees F
until browned (15 to 20 minutes). Makes about 16
blintzes.

2 Cups MIIk
2 oz. Kahlua
Put ingredients in a blender.
Operate on high position for 30 seconds.
