dining
room
is bigger
The Benmiller Inn
welcomes the autumn
season with new and
enlarged dining facilities.
Modifications have made
the existing dining room
more welcoming and
accessible by providing a
new and more convenient
entrance,
The solarium has also
been altered and has
become a light, bright
cheery dining ,roorn, the
ideal spot for relaxed
dining in autumn and
winter, with a marvelous
vim of .terrace, garden
and hillside. Fhsd
facilities will make it
easier to accommodate
private groups.
As well as the physical
alterations, an entirely •
new and exciting menu
has been 'developed,
presenting local products
in interesting and
unusual ways. Food has
always been important at
Benmiller and the in-
tention is to make the Inn
as well known for its .
exquisite food as it is
already known for. its
imaginative • and
luxurious ac-
commodations.
The recently in-
troduced dinner menu
captures flavours of fine
old fashioned country inn
dining offering local
items such as sauteed
trout, roast marinated
pheasant, braised rabbit, •
roast lamb and beef. The
rabbit is raised right in .
the hamlet of Benmiller.
Only fresh vegetables are
used, and there are plans
for growing vegetables on
the Inn property itself.
Freshness is guaranteed,
most coming from the
local market gardens.
The Chef's recom-
mended menu allows for

interesting foods such as
fresh Maitland River
salmop, Lake Huron
perch, or game. To match
the quality of the fare, the
cellar is stocked with.a
carefully selected list of
wines that admirably
compliment the food.
From time •to time,
special buys of limited
quantities of unusual and
hard -to -find vintages
offer a chance for ad-
venturous tasting. .
Credit for this new
menu and the develop-
ment of recipes _goes to
the chef, Bernard Verge,
a remarkably talented
young man, whose goal is
to develop a unique
Benmiller kitchen that
reflects the Inn's style
and location. Bernard
learned his craft in the
kitchens of some of
Ontario's finest country
clubs and spent six years
with a major hotel chain
before coming to Ben -
miller. Last October, he
set about the painstaking„
task of developing his
own menu for the Inn.
The • results of his en -
devours are there to be
tasted...and Bernard has
not stopped searching
and experimenting!
The kitchen provides
only one aspect of a total
dining experience. The
Head Waiter, Hugh Neil,
who joined Benmiller in
1977 is determined that
the dining room service
and. , atmosphere will be
thoroughly professional
without ever losing the -
warmth and friendliness
of,a real country inn. His
vast experience, gained
in such fine establish-
ments as Toronto'
legendary Frapz Josef
Room and Jasper Park
Lodge is being passed on
to his eager staff.
