STUFFED PORK BUTT ROAST
IMPERIAL MEASURE
4-5 Ib. Pork Butt Roast (boneless)
4 cups Bread crumbs
1/2 cup finely chopped celery
1/2 cup finely chopped onion
Thyme or Sage
1/2 tsp. salt
1 tsp. poultry seasoning
1 cup chicken broth
1/4 cup melted butter
METRIC MEASURE
1.8-2.2 kilo Pork Butt Roast (teless)
960 ml Bread crumbs
120 ml finely chopped celery
120 ml finely chopped onion
Thyme or Sage .
2.5 ml salt
5 ml poultry seasoning
240 mi chicken broth
60 ml melted butter
Rub the outside of roast and opening with thyme or sage. Thoroughly com-
bine the remaining ingredients for stuffing. Lightly fill the opening of roast
with stuffing. Close opening withskewers and tie with cord. Place the roast
fat side up on a rack in shallow roasting pan. Score top surface with shallow
cuts Insert meat thermometer into centre of meat. Roast at 325" F (160" C)
until thermometer registers 170° F (76° C). • Let stand in warm place 15 min.
0011 to make carving easier. Make gravy using pan drippings. Makes 8-10 servings.
Delicious with spicy applesauce and buttered.. squash. • (for about 30 min.
