Peel and mash ripe peaches to•' make 1 cup (250 ml.) peach
• pulp. Adi lemon juice, sugar, egg yolks, salt, and orange rind
ifilt to peach pulp. Fold in egg whites.
• Place mixture in a 7 -inch (17.5 cm.) baking dish. Bake in a
I�slow oven 325°F. (160°C) for,.45 minutes. Serve hot with cream.
