GINGERED CARROTS
2 ib carrots, peeled and sliced
1/ inch thin .
2 cups boiling water
3-4 tsp salt -
1/ cupbutter, melted
1 tsp ground ginger

Freshlytspsalt ground black pepper
In a heavy saucepan, cook
carrots in boiling water and 3-
4 teaspoon salt until tender
(15 minutes).. Drain and mash
Carrots. Add butter,rginger 1/2
teaspoon salt and a grinding
of pepper. Reheat over low
heat.. Makes 6 servings (31/2)
