Ottawa's only school of cake
decorating ... and 'maybe the
only one • in Canada. A's the
instructor, 'Mr: '-Bloomfield
has impressive credentials
from several schools in' the
United States.
He ''offers `four separate
courses each'12 weeks long,
and each'costing.$50.'.
Now in his "late, 60s, Mr.
- Bloomfield has spent 30 years
'at his craft. While working ih
a' Goderich bakeshop,'`. Mr:
Bloomfield. noticed that.
bakery outlets• didn't cater to
the 'cus.tomers'`real wants.
In_1992,'he enrolled at the
National Baking Institute in
Chicago. 'He just wanted to
:get- the 'bogies of baking. •But
he promised himself that
when. he :started his' own
bakery, his cakes. we:re
``going to be different',;'.
• But .the, .baking basics
'weren't' enough . Mr.
• Bloomfield`s real 'intertest
turned'tb cake decorating and
there.'•was only a smattering
of that. in the course at the
'NationalBakinginstitute

Chicago; where Betty
Newman May,"one of •the •

Mr. Bloomfield also studied
at the Wilton .School of Cake
Decorating in Chicago and at'
the San Diego School.of Cake
Decorating. • Finally his . in-
terest in the unusual led him
to take a course .in:Mexican
sugar art;which uses a gum
paste. type of icing that
solidifies .and is `rolled out
something like a pastry. •
