Warm up your carollers with treats
Exquisite Eggnog — Yields seven
cups
4 eggs, separated
1 can (300 mL) sweetened con-
densed milk
1 c. brandy or rum, optional
1 tsp. vanilla extract
4 c. homogenized milk
1/4 tsp. salt
Nutmeg
In a large bowl beat egg yolks
until thick and light. Gradually
beat in sweetened condensed milk,
brandy or rum, vanilla, milk and
salt. In a small bowl beat eg
whites to soft peaks; gently fold
into egg and milk mixture. Chill.
Pour into chilled bowl or serving
cups. Garnish with nutmeg.
Hot Cocoa Winter Warmer
(Makes 1 serving)
1 tbsp. Cocoa (15 mL)
11/2 tbsp. sugar (25 mL)
1 tbsp. cold milk (15 mL)
1 cup hot milk (250 mL)
1/8 tsp. peppermint extract (1
mL)
Combine cocoa and sugar in a
mug. Blend in cold milk. Stir in
hot milk and mint liqueur. Stir
with a candy cane.
Cocoa Mocha
(Makes about 21/4 cups/550 mL)
2 tbsp. Cocoa (30 mL)
2 tbsp. instant coffee granules (30
mL)
3 tbsp. sugar (45 mL)
2 tbsp. cold milk (30 mL)
2 cups hot milk (500 mL)
sweetened whipped cream
Cranberry Muffins
Makes 12 muffins
1 c. (250 mL) all-purpose flour
1 c. (250 mL) whole wheat flour
1/2 c. (125 mL) sugar
1 tbsp. (15 mL) baking powder
1/2 tsp. (2 mL) salt
l egg
1/4 c. (50 mL) vegetable oil "
1/2 c. (125 mL) milk
1 tsp. (5 mL) vanilla
1 c. (250 mL) whole berry
cranberry sauce
Mix all-purpose flour, whole
wheat flour, sugar, baking powder
and salt. In large mixing bowl,
beat egg, oil, milk, vanilla and
cranberry sauce. Add dry ingre-
dients. Stir until just blended.
Spoon into greased or paper lined
muffin cups. Bake at 180° (375°F)
for 20 minutes.
