inducted into Cake Hall of Fame
Russell Bloomfield recalls every moment
of that magic August night in the ballroom
of the Conference Centre in Indianapolis,
Indiana.
"The chairman was up on the platform.
As soon as she started to read my resume, 1
knew I'd been put in.
"I was so excited I didn't know which way
to go. I was wishing one of my children
could have been there, I'll tell you," said the
Ottawa father of five and grandfather of 10.
Bloomfield, who began work at the age of
15 stoking ovens in a family bakery (Curry's
Bakery) in Goderieh, had readied the pin-
nacle of a 65 -year career.
He'd been inducted into the Cake
Decorator's Hall of Fame.
Bloomfield proudly displays the plaque
engrave with the emblem of the Interna-
tional Cake Exploration Society – a group of
more than 3,000 of his peers from around the
world – and the dat: August 27, 1987.
He is only the second Canadian to be
inducted.
Bloomfield is 80 now. With his wife ailing,
he doesn't go as often to his Wellington
Street cake decorating store, Artistic Cake
Design Centre. His son Brian runs the shop.
But Bloomfield was glad to put on his
baker's coat and spend a tnorning..talking
about the tricks of his trade – how to make,
buttercrearn icing stay white and rosebuds
swirl.
No special artistic talent is necessary to
decorate a cake, insists Bloomfield, who's
trained more than 2,500 people at courses
run, in the basement of the store.
But the best have heart for the work.
Bloomfield often went to the Experimental
PEOPLE
Farm to study rare flowers for inspiration.
He kept up with the times, buying a fancy
power decorating tool that looks like a cross
between a dentist's drill and spray painter.
It allows bakers to "paint" portraits on a
cake.
But it's the classic cakes that have
repeated themselves thousands of times
under Bloomfield's steady hand: lacy wed-
ding cakes, rabbit -shaped birthday cakes
and every type of congratulation – Happy
Retirement, Bon Voyage, Best wishes.
His career started in Goderich when he
was 15 -years -old.
"We had a large family, seven boys and
six girls, and I left school to go to work in a
bakery," he said.
"Young guys like myself who were in
training lived at the bakery with the owner.
We had to be up at 3:30 every morning, six
days a week, breakfasted at 6:30 a.m. and
worked until 6:30 p.m. And there was no
such thing as a summer vacation in those
days."
While at the bakery, he took home study
courses in baking science and technology,
business management and accounting to
upgrade his education. Then he moved on to
get more experience in Guelph, Toronto,
London and Kitchener.
'I wanted to know how other bakers did
things. I was curious about the purpose of
putting shortening into a cake. It makes it
more tender. And why sugar? Besides

Agri -Food Week, an annual event focuss-
ing' attention on the importance of On-
tario's agriculture and food industry, will
be celebrated this year from Oct. 4 to
, .Thanksgiving Day, Oct. 12.
Scores of displays and special events are
planned in communities across the pro-
vince including a Farmers' Market at the
Ontario Science Centre on -Sunday, Oct. 4
and a special float in the Kitchener -
Waterloo Oktoberfest parade Monday,
-Oct. 12-as:weil as -farm bus tours, dinners,
poster contests and TV coverage of Agri -
Food Week.
The official Agri -Food Week kick-off will
take place at a luncheon for business, farm
and community leaders at the Royal York
Hotel Oct. 6. Keynote speaker will be
George 1' leiscnmann, president of the
Grocery Products Manufacturers of
Canada.
The promotional week is sponsored by
the Ontario Federation of Agriculture, the
Ontario Ministry of Agriculture and Food
and seven commodity groups - Ontario
beef, chicken, egg, grape, milk, pork and
turkey producers.
Chairman of this year's Agri -Food Week
committee is Joseph Christi, a
Bowmanville-area farmer and member of
the Ontario Federation of" Agriculture's
communications 'committee.
Mall displays, luncheons and other
special events are being held by local Agri -
Food Week committees in about 45 Ontario
counties.

sweetening the cake, it makes a better
crumb and gives grain to it.
Bloomfield has also travelled the world to
learn his trade. He went to England to
unearth the secrets of royal icing, to France
for chocolate. He spent two weeks, in
Belgium, working with a master baker. The
man didn't speak English, but it didn't mat-
ter, as the two explored the mysteries of
marzipan.
"1 didn't want to be an ordinary baker. I
wanted to make baking and cake decorating
my career."
In 1938, he got a job in Oshawa as a baker
manager of a retail shop. Eight years later,
he was a baking instructor at the HMCS Cor-
nwallis near Halifax. ' After WW H, he
bought a baking business in Barrie which he
sold in 1957 and went to Ottawa as manager
in an in-store bakery in a supermarket,
Robinson's IGA.
"It was the beginning of the supermarket
boom and the idea of having a bakery shop
in a large store was new at the time."
In 1965 he resigned to become pastry chef
at Ottawa's Carleton University. He quit
that position in 1975 and finally realized his
dream at the age of 69 - owning his own
bakery and cake -decorating school.
"Well, I started talking to myself one day
and said, 'I'm going to be 70. They're going
to kick me out of here. Here I am, left with
nothing, no pension, what am I going to do'?
"Wgll, I changed my clothes and I said, 'if
anybody's looking for me, I'll be back
tomorrow morning.' I got in the car and
went up Bronson and came down Preston
and saw a sign in a little store for rent. I
went in and that's where I Started."

Rev. Roberts conducted the service with a
sermon given by Rev. Plugg.
Following the service, Hudson Warr
welcomed the congregation and visitprs and
called on Charlie Orr and various group
leaders of Victoria Street United Church to
bring greetings to Pastor Tombs.
Leonard Fisher of Benmiller congrega-
tion gave greetings and introduced their
leaders. Greetings from the local
ministerial were given by Rev. Ball of
neighbouring North Street United Church.
Lelia Finkbeiner `brought greetings from
Huron Perth Presbytery. Pastor Tombs
responded and pronounced the benediction.
Following grace by Pastor Tombs and the
reception line, lunch was served and a time
of fellowship was enjoyed.
