Creative, tasty appetizers can be prepared in advance and be ready to serve when unexpected guests arrive. For example, a delicious recipe for stuffed eggs includes 10 hardboiled eggs (shelled); 'h cup mayonnaise; one teaspoon prepared hot mustard; a dash of Tabasco; one tablespoon of Liquore Galliano, red caviar and green pepper strips. Halve the eggs lengthwise and remove the yolks, mix in mayonnaise, mustard, Tabasco and Liquore Galliano, blending until very smooth. Press the yolk through a pastry bag into egg white halves and gar- nish with red caviar and pepper strips. Makes 20. - Another suggestion is Italian baked clams, which will require 36 hard shell clams; '/z cup white wine; two cloves garlic, minced; one third cup minced parsley; cup grated Parmesan cheese; '/a teaspoon black pepper; 1/2 teaspoon oregano; two tablespoons Liquore Galliano; two tablespoons olive oil and '/a cup of bread crubs. Place the scrubbed clams and wine in a large, heavy skillet, cover and steam over low heat until shells open. Discard top shells and arrange in a shallow baking dish. Mix the next five ingredients and spoon over clams. Combine the Liquore Galliano and oil, sprinkle over clams, and then sprinkle the bread crumbs over all. Bake in 425 degrees oven for eight minutes. Serves six. A simple recipe of fish in wine sauce is a delightful alternative for guests who have tried of holiday turkey and "all the trim- mings." Ingredients include 11 tablespoons lightly t salted butter or margarine; a cleaned, scaled red snapper, weighing about two pounds; a few grains each of salt and pepper; one large sliced tomatoe; one small onion, peeled and sliced; four lemon slices; 3/4 cup of Folonari Soave; '/s teaspoon dried oregano leaves; one bay leaf; one cup heavy cream and 11 teaspoons cornstartch. Heat the oven to 350 degrees fahreneit and butter a 13x9x2 inch baking dish with 1 teaspoon of the butter. Sprinkle fish inside and out with salt and pepper and place fish in baking dish, dotting with remaining butter. Arrange tomato, onion and lemon slices around and on top of the fish. In a small bowl, combine wine, oregano and bay leaf, and pour over fish. Bake 30 to 40 minutes, until fish is translucent near the bone. Transfer fish to a heated serving platter and strain pan juices into a small saucepan. In a small bowl, mix heavy cream and corn startch until smooth; stir in wine mixture. Cook over low heat for five minutees, stirring constantly with wire whisk or wooden spoon until mixture boils and thickens. Pour over fish and garnish with lemon wedges, dill and olive slice. Makes two hearty servings. On top off the "light" meal, serve guests a Florenza Colter, made with Florenza Liqueur, the new hazelnut liqueur from Italy. Add 11/2 oz. Florenza; 3/4 oz. Barbados dark rum and one scoop rasberry sherbet and crushed ice in a blender. Blend until smooth. Serve in chilled glasses, garnished with three raspberries. Complete with case.
