Maple Pumpkin Pie
2 beaten eggs
Seven -eighths cup milk
11/2 cup pumpkin
1/2 tsp. salt
314 cup maple syrup
1 tsp. cinnamon
'/z tsp. ginger
1 tsp. nutmeg
'/4 t4. cloves
Combine all the above ingredients and pour into unbak-
ed pie shell. Bake at 450 degrees F. for 10 minutes, then 350
degrees for 40 minutes.

Eggnog Pie
1- 9" crumb or pastry pie crust ( baked)
1112 tbsp. gelatine
1/4 cup water (cold )
2 cups milk
One-third cup sugar
1/4 tsp. salt
3 eggs, separated
6tbsp. sugar
2 tbsp. rum or '/z teaspoon artificial rum flavouring
1 tsp. vanilla
Nutmeg
Sprinkle gelatine over cold water and let stand until
softened.
Heat milk, one-third cup sugar and salt in saucepan.
Add gelatine and stir until dissolved. Add a little of the hot
mixture to the beaten egg yolks, then return to saucepan
and cook for 2 minutes. Chill until slightly thickened.
Beat egg whites until frothy and gradually beat in 6
tablespoons sugar until stiff and shiny. Fold into chilled
custard along with flavourings. Pour into prepared crust,
sprinkle with nutmeg and chill until set.
For a festive touch, garnish with whipped cream, shav-
ed chocolate and sliced red and green cherries if desired.

Impossible French Apple Pie
6 cups sliced pared tart apples
11/4 tsp. cinnamon
1/4 tsp. nutmeg
1 cup white sugar
314 cup milk
•1 cup bisquick baking mix
2 eggs
2 tbsp. softened margarine
Heat oven to 325 degrees F. Grease pie plate 10" x 11/2".
Mix apples and spices and turn into plate.
Beat remaining ingredients except strusel until smooth,
15 seconds in blender or 1 minute with hand beater. Pour
over plate. Sprinkle with strusel.
Bake until knife inserted in centre comes out clean — 60
minutes.
Strusel:
Mix 1 cup bisquick mix
1 cup chopped nuts
1/3 cup packed brown sugar
3 tablespoons margarine until crumbly and put over pie.
