French Onion Soup
6 medium onions
4 bouillon cubes (beef)
9-6 cups water
1 tbsp. margarine
Salt and pepper to taste
Slice onions thinly, while margarine is melting in a fair-
ly large pot. Add onions, cook over medium heat 10 - 15
mins., stirring occasionally to prevent onions from stick-
ing. Then add water and bouillon cubes. Bring this to a
boil and then let simmer for at least an hour. The longer it
simmers, the better it will taste.
When serving, spoon into onion soup bowls. Float some
croutons on top, and a large slice of mozzarella cheese,
enough to cover to whole top of the bowl. Place in the top
of the oven, preheated to high broil, and broil until cheete
melts. Serve immediately. Serves 6.
