Topics may include: petit fours, modeling with marzipan, wedding floral centrepieces, and preparation of show pieces. Offered at: Clinton, Mount Forest, Stratford, Waterloo. Basic Cooking S This course is designed for the inex- perienced cook who is interested in learning the fundamentals of cooking. Topics include the preparation of soups, entrees, desserts, use of spices and basic nutrition. Preparation and demon- stration will take place in our kitchen fa- cilities. Offered at: Waterloo. Dehydration Of Food S Dehydration of food is one of the oldest and best ways of preserving food, particularly useful to back -packers and campers. This seminar will explore the methods of drying and the reconstitution of different kinds of food. Come and try samples of fruit leather, home-made raisins and tomato powder! Offered at: Guelph. Gourmet Cooking S This course is designed for the inex- perienced gourmet cook who is interest- ed in learning the basic fundamentals of cooking for two. Preparation and de- monstration will take place in our kitchen facilities. Offered at: Clinton, Waterloo. Dietary Aid - Part I A These courses will be of interest to dietary services employees and to students interested in seeking employ- ment in the food service area of a health care institution. Topics include: sanita- tion, safety, the digestive process, good nutrition, feeding programs, diet in disease, special diets, human relations. Prerequisite: Students must be able to speak, read, write and understand En- glish. Offered at: Clinton. Dietary Aid - Part II A Topics include: dishwashing proce- dures, menu planning, solid and vegeta- ble preparation, cold larder, cafeteria service, purchasing, costing, portion control, dietary forms and records. Introduction To Herbs S This seminar will cover everyday use of herbs, how to grow, and freeze and dry for winter storage. Benefits of herbs for your health and their uses in cooking will be discussed. Offered at: Guelph. Herb Luncheon S Rachel McLeod of Kiln Farm will introduce the healthful uses and meth- ods of cooking with spices and herbs. This will be followed by a demdnstration 24 lunch. Christmas decorations using herbs and live plant material will be discussed in the afternoon. This course will be held at Kiln Form (about 20 km south of Guelph). Offered at: Guelph. Indian Cooking Workshop N This workshop is designed for the experienced cook who is looking for an opportunity to expand his/her cooking experiences. Students will learn how to develop the menu, how to use and where to buy spices, how to prepare, and how to serve Indian meals. Meals will be prepared and served during the course. Offered at: Waterloo. Gingerbread House Workshop S Do you have trouble deciding what to give people for Christmas this year? Do you have children on your Christmas list who like magical surprises? Learn how to make your own Gingerbread house. This demonstration session will teach you in an enjoyable and economical way, Gingerbread House design, con- struction techniques and decorating. Specific items covered: gingerbread applications, roof design, royal icing application. Recipes and patterns will be provided. Offered at: Guelph, Listowel, Mitchell. Oriental Cooking S This course will familiarize students with Chinese culinary art including many exotic ingredients, and authentic Chin- ese equipment. Students will learn to make spring rolls, wonton, sweet and sour chicken, barbecued pork, tempura, Szechuan hot and sour soup, fried rice, Moo Goo Guy Pan, Tai Dop Voy and many more mouth watering dishes. Offered at: Waterloo. PHOTOGRAPHY Photography S This course is for the person who knows very little about Photography. The objective is to familiarize each student with the basic fundamentals of photog- raphy including exposure control, com- position, lighting, filters. It is advisable to bring a 35 mm camera to class. Offered at: Doon, Waterloo. Photography I S This course is for the amateur and individual who knows very little about Photography. It covers: how your cam- era works, how to select a camera, film types, enlarging, lighting and how to take a good photograph. Offered at: Stratford. Photography - The Basics S The objectives of this course are to provide the student with a firm under- standing of their camera through practi- cal demonstrations, shooting assign- ments and slide presentations. The student wilt be able to: load the camera properly, identify and operate the parts of their camera, choose the correct film for the lighting available, and correctly: expose, compose, light and create better pictures. Equipment: 35 mm camera, manually operated or automatic. Flash unit. Offered at: Guelph. Nature Photography S This course is designed for those with some previous knowledge of the photo- graphic arts who wish to concentrate on shooting nature skills. Creativity of individual style will be emphasized. The course will begin on Friday evening from 7 p.m. to Jrp.m. During this time we will discuss techniques to be used the following day and will preview sample slides. Saturday morning sharp at 5 a.m., we will meet in the Conestoga College Parking Lot. We will depart immediately to the shooting location to study practical photographic set ups. Afterwards, students will individually create their own artistic studies. On the following Saturday morning students will meet at Conestoga College from 9 to 12 for a critique session. It is imperative that your film be processed for that session. Students will supply their own film, tripod and other acces- sories. (lenses, filters, etc.) Suggested film: slide film is preferred for critiquing Suggested film speed: early morning - Ektachrome ASA 200 or 400: 8 a.m. lighting - ASA 64: fine grain (sharper image) - ASA 25 in bright light. Offered at: Guelph. Advanced Photography S This course will provide the student with an opportunity to practice advanced techniques. The course includes practi- cal assignments and critiquing sessions. Students will learn the art of pre - visualization using the new techniques taught in this course. Demonstrations by the instructor, and practical experience will help students understand the opera- tion of their equipment. Students should bring a 35 mm camera with adjustable aperture and shutter speeds either manually operated or automatic with manual override; flash unit (preferable electronic) with 60 inch flash synchronization cord. Persons with skilled camera techniques who want to broduce portraits of their family and friends. Topics include: the effects of lighting and shadow, how to pose the subject and how to create a setting which reflects the mental image of the subject.
