buying food, in summer
Never buy unrefrigerated
sausage rolls, meat pies, or.
barbecued chicken. If they.,
-are sold ata warm tem-
perature, they should be kept
over 60 degrees C (140
degrees F). Room tem-
perature enables bacteria to
grow. Always check that
these products have been
freshly cooked and have not
been held for several hours.
After buying, refrigerate
them within two hours.
Do not purchase cracked
eggs. While they may appear
to be a bargain, the risk of.
contamination by salmonella.,,
bacteria is too great. The
bacteria are present on the
exterior of the shell and can
enter the contents of the egg
through cracks. If an egg
becomes cracked, use It in a
food which will be
thoroughly cooked. Any
bacteria which are present
will be destroyed by heat.
Check cans to ensure that
they are not bulged at the
ends or on the side seams.
Bulging indicates that the
contents have spoiled.
Dented cans are safe to buy
as longas the seals are not
broken.
Buy tightly sealed vacuum
packed meats. A package
where the film does not
adhere to the meat, has a
poor seal. The meat inside
will not be in top quality.
Avoid frozen food
packages with a heavy frost
buildup. This is an in-
dication that the contents
may have previously thawed
and been re-frozen.Damaged
frozen food packages should
be avoided as bacteria are
able to enter through tears
and holes.
When buying products
from refrigerated units.
check that they are cold.' If
the items are stacked in high
piles above the load line, do
not buy the packages on the
top as the refrigerators are
unable to cool large piled up
quantities of food.
avoid buying
unrefrigerated items such as
eggs and dairy products
which are stacked in the
aisles because of over-
stocking or a shortage of
refrigeration space.
Have meats sliced at the
delicatessen 'counter while
you wait. Avoid buying meat
that is pre -sliced as , it
deteriorates more rapidly.
Also it is not always rotated
to guarantee freshness.
Be careful when buying
reduced fresh produce.
Over -ripe or bruised fruit
may appear economical but
it may be moldy. Check for
mold on the blossom orstem
