HomeMy WebLinkAboutThe Goderich Signal-Star, 1981-11-04, Page 63Page 3 Let them eat cake GARDEN CARROT • CAKE 4 eggs 1 cup honey ',e cup lightly packed brown sugar 1 cup vegetable oil 21/4 cups all-purpose flour 1 tsp. salt 2 tsp. baking powder. 1 tsp. baking soda 1 tsp. cinnamon 1 tsp. nutmeg 3 cups grated raw carrots 1 cup chopped walnuts 1 cup raisins Beat eggs. Gradually beat in honey and sugar, beating until light. Gradually beat in oil. Sift together flour, salt, baking powder, soda and spices. Stir dry ingredients into batter. Stir in carrots, nuts and raisins. Pour into a greased 9 x 13 inch cake pan. Bake in 325 degree oven for 45 to 50 minutes. Cool, then dust with icing sugar or frost with Cream Cheese Frosting. Cream '/i cup margarine Blend Y2 cup brown sugar and 1 tsp. vanilla Mix 11 cup flour, into the above Pat evenly into greased pan. Bake in oven till brown (about 15 min.) Spread 19 oz. can pineapple ( drained) over this. Beat together: 1/4 cup margarine 3/4 cup white sugar Legg 1 tsp. vanilla 1 cup coconut Spread over pineapple and bake until brown. Barbara Desjardins Goderich CHOCOLATE BANANA CAKE 1 cup white sugar / cup brown sugar 1 cup butter 1 egg 1 cup mashed banana with 1 tsp. soda 3 tbsp. cocoa dissolved in 1 cup boiling water Pinch of salt 1 tsp. vanilla 11/2 cup flour 1 tsp. baking powder Bake in layer pan for 30 minutes at 350 degrees F. Marg Clarke RR3 Zurich LIGHT FRUIT CAKE 1 cup margarine 11/2 cups white sugar 3 eggs 1 tsp. vanilla 3 cups all-purpose flour 2 tsp. baking powder 1 tsp. salt 1/4 lb. mixed peel 1/2 lb. mixed fruit '/a lb. glazed cherries 1 Ib. white raisins 1-14 oz. tin crushed pineapple and juice Mix flour, baking powder and salt and use to coat fruit. Mix remaining ingredients, add to floured fruit, adding pineapple and juice last. Bake in 300 degrees F for two hours or until done. Keep tin of water in,oven during baking. Makes 1 large square cake or two loaves or four nut tins (1 lb.) suitable for gifts. Margaret Errington R.R. 2, Auburn SPONGE CAKE 3 eggs �. 4 tbsp. water 1 cup sugar, 1 cup flour 1 tsp. vanilla 1 tsp. baking powder Beat the yolks of eggs until light and then add the sugar and water. Sift the flour with the baking powder and add to the first mixture': Beat whites stiff and add. Lastly add the flavoring and bake in an ungreased pan in a slow oven. Kathleen Glen Goderich CHOCOLATE ZUCCHINI CAKE Cream: 1/2 cup margarine '/2 cup vegetable oil 13/4 cup white sugar Beat: 2 eggs 1 tsp. vanilla '/z cup milk Sift: 21 cups all purpose flour 4 tbsp. cocoa 1 tsp. baking powder '/z tsp. baking soda 1 tsp. cinnamon 'h tsp. cloves Add dry ingredients and moist ingredients alternately to creamed mixture. Stir int cup chocolate chips, 2 cups finely diced, peeled zucchini. Bake in 9 x 13 greased, floured pan in 325 degree F oven for 30-35 minutes. This can be iced or sprinkle with icing sugar.
