HomeMy WebLinkAboutThe Goderich Signal-Star, 1981-11-04, Page 55Munch on muffins CARROT PINEAPPLE MUFFINS 1% cups sifted flour 1 tsp. baking powder 1 tsp. soda 1 tsp. cinnamon 1 tsp. vanilla 1/2 tsp. salt 1 cup sugar (white) Sift together and add: two-thirds cup Crisco oil 3/4 cup grated carrots 3/4 cup crushed pineapple and juice 2 egg yolks Mix together and add beaten egg whites. Beat hard for two minutes. Bake in greased muffin tins at 325 degrees F for 20-25 minutes. Grace Campbell, Luclmow EASY DIET BRAN MUFFINS 1 cup flour 1 tsp. baking soda 1 tsp. baking powder 1 tsp. salt 2 cups prepared bran cereal 2 eggs (beaten) 112 cup molasses 1112 cups milk Sift flour, soda, powder and salt together. Add bran, eggs and molasses. Add milk and stir until dry ingredients are dampened. Grease muffin tins lightly. Divide into equal portions (makes 15 to 18). Bake at 375 degrees F for 15 to 17 minutes. Stir well to blend. Stir in oatmeal."' Add remaining ingredients and stir just enough that dry ingredients are moistened. Fill 12 muffin cups. Bake at 400 degrees F for 18 to 20 minutes. Into flour sifter put : 1/ cups flour 1 tsp. baking powder 1 tsp. baking soda 1/4 tsp. salt Add first mixture alternating with 1 cup applesauce. Place in greased muffin tins and bake in a 375 degree oven for 20-25 minutes. Jean Brown, Clinton PUMPKIN MUFFINS 1 egg 1/2 cup milk. 1/2 cup mashed pumpkin 1/4 cup vegetable oil 11/2 cup whole wheat flour 1/2 cup white sugar 1/2 tsp. cinnamon 112 tsp. nutmeg raisins (as desired) walnuts (as desired) 2 tsp. baking powder. 1/2 tsp. salt Beat egg, add oil, milk and pumpkin, beat well. Sift dry ingredients into mixture. Stir only to mix. Fold in fruit and nuts. Spoon into greased or lined muffin tins. Bake at 400 degrees F. for 15-20 minutes. Gail Currie Goderich
