Make a special casserole dinner
BEEF AND CHICKEN CASSEROLE
11 lb. ground beef
1 cup chopped celery
1 cup chopped onion
2 tbsp. soya sauce
2 tsp. Lawry's seasoned salt
1 small can peas
1 pkg. Lawry's Chicken Noodle Soup
1 small can mushrooms
31 cups hot water
1 cup uncooked rice
Brown beef, celery, onion, soya sauce and seasoned
salt. Add soup mix, peas, mushrooms, water and rice. Mix
well.
Pour in large casserole, cover and bake 11 hours at 350
degrees. Remove cover and bake another 1 hour. Serves
8.

CARROT AND SPINACH CASSEROLE
4 cups carrot slices
1 cup sliced onion
4 cups packed fresh spinach.
Sauce:
3/4 cup margarine
3 cup flour
2 cups grated cheddar cheese
1 tsp. salt
2 cups milk
Blend margarine with flour and salt, over medium heat.
Stir in milk. Cook until thick. Remove from heat to add
cheese.
Method:
Boil carrots and onions on top of stove until tender.
Drain. Put 1 spinach in large shallow baking dish. Cover
evenly with '7'2 of cooked.carrots and onions.
Pour'/ of sauce over the carrots. Repeat these 3.1ayers,
pressing down and finishing with the sauce.
Sprinkle 1 cup dry crumbs on top. Bake 350 degrees F.
for 35 minutes.

RICE AND SALMON CASSEROLE
1 and one-third cups rice
1 tsp. salt
1 and one-third cups boiling water
2 tbsp. butter
2 tbsp. flour
1 tsp. salt and pepper
2 cups mills
1 can salmon - flaked
1 cup grated cheese
Cook rice in boiling water. Melt butter in pan, add milk,
thicken with flour, add salt and pepper.
Arrange in casserole with cheese on top. Bake in 350
degree oven for 20 minutes. Can use one can mushroom
soup instead of white sauce.

CORN CASSEROLE
6 -10 strips bacon - cut in 1" pieces
'/z cup chopped onion
Y2 cup chopped celery
2 tbsp. flour
'/e tsp. salt
% tsp. pepper
1 tsp. sugar
1 cup milk
2 eggs.- beaten
1' cups shredded carrots
12 oz. kernel corn
Fry bacon until crisp - drain. Add onion and celery to
bacon fat and saute 'until onion Is transparent - ap-
proximately 5 minutes. Stir in flour and seasonings.
Gradually add milk and stir constantly until smooth and
thickened.
Remove from heat and add remaining ingredients.
Place in greased casserole and bake at 350 degrees for 90
minutes. Sprinklebacon on top before serving. Serves 6-8.
