EGGS POO TUNG
12 oz. sliced mushrooms (10 oz, can may be used)
2 oz. sliced onions
2 oz, sliced celery
2 oz, margarine
2.2 oz. bean sprouts
4 beaten eggs
2 tbsp. salad oil
Salt and pepper to taste.
Pry mushrooms, onions, and celery in the margarine
for 5 minutes without colouring, Season well and add bean
sprouts, cook 2 minutes longer and cool
Combine beaten eggs and cooked vegetables in a bowl.
Beat the oil in a large skillet and drop large spoonfuls of
the mixture into pan (like pancakes). Turn when brown
and brown reverse side a little. Serve immediately with
plum sauce,
1 cup plum preserves
One-third cup chutney
2.tbsp, packed brown sugar
2 tbsp, cider vinegar
Dash of cayenne pepper
Combine all ingredients in small saucepan. Stir over
medium heat until rnixture boils. If too thin, thicken with
cornstarch. Yield: 11 cups.

1 frown round steak - cut away all fat
Sliver off pieces of meat in strips.
In wok or large frying pan, pour 1/4 inchof soya sauce
and dash of salt. bring to a boil Add steak slivers, cover
and cook until all soya sauce has evaporated.
Add the following vegetables, cut in large pieces:
2 stalks of celery
I green pepper
I or 2 large onions
Can of whole mushrooms including water they are packed

Rambo shoots or water chestnuts
Cook on high heat for 10 minutes. Yeo not let vegetables
lose firmness, Von only want to steam them, Serve over
white rice,

OVEN FRJED RICE
2 cups raw rice
4 stalks celery (chopped)
I can mushrooms plus juice
1 cup oil
I pkg. onion soup mix. -
1green pepper (chopped)
3 tbsp, soy sauce
31/2 cups water
Mix together and put into a 6 -quart casserole. Rake at
350 degrees F for 11/2 hours. Serve hot, Violet I.amtb
