Goderich 'Township Women's Institute provided Old Time Music on Monday afternoon and it was nice to see the volunteers back along with, Molly Cox and Alberta Driver. Mr. Chalut was here this past week again showing slides of his tripsand these travel slides are both in teresting and educational. The residents would like to thank Mr. Chalut for adding armchair travelling to the program. Holmesville 4-H cooking club meets The second meeting of the Holmesvi Ie II Egg-cellent Chefs was held .on September .12 at the home .of our leader Bev. Van Ninhuys. Our president Shana Hut- chings opened the meeting with the 4-H pledge. We then answered the roll call from our project manual 'Next our leader Bev gave out pamphlets called "Safety is for the Birds." Jeannie and Barbie removed the chicken after being boiled for a few hours and drained it with a slotted spoon. ThenChristine went to work on rendering thechicken fat.. Everybody helped in preparing the chicken for"`Trying which we would eat later. We also read from our project manuals. Our Home activities for the next meeting were to try one chicken recipe from the collection -we made last meeting. The ..meeting was closed and everyone devoured some Nice 'n Spicy Chicken. We went to work on preparing Quiche and • Chicken soup. Shana and Margaret Anne were in charge of making soup. and the rest of us helped in making the Quiche. Despite their menacing look, the secretaries were soundly whipped by the opposition. About $800 was raised for the hospital's new ICU. ( Photo by Cath Wooden) You and your health (unit) Think about Thanksgiving BY: CATHY THOMSON, NUTRITIONIST With Thanksgiving just around the corner, it is time to think aboutpreparing-all those goodies safely. Did you know that mild cases of indigestion after Thanksgiving dinner may not be indigestion at all but rather a case of food poisoning? Food poisoning is much more common than is . reported simply because people do not recognize„ it. Food poisoning can .be prevented by proper food handling. Of what should you beware? Read on. Certain foods are more prone to . grouting harmful, organisms than others. Unfortunately many of these are special favorites at holiday time -. just when refrigerators and ovens are overloaded. The main culprit, is the turkey; although meat, fish, gravy, sauces, poultry dressings, eggs, milk and milk products are all potentially dangerous. Raw fowl carries a bac- teria . called .salmonella. It causes the most common type of food poisoning, and it can be prevented by proper handling„ Cooking of the turkey inactivates the salmonella bacteria so that it does not harm us. So how are problems caused? Placing the raw• turkey on a surface that you use for other foods will cause the surface to become infected. Then if you chop some coleslaw on the wine surface, the salmonella bacteria is transferred to it. Or if the cooked turkey is placed back )n the surtace it con- taminated when raw, it will become re -contaminated. So be sure to clean sur- faces very thoroughly after --raw fowl has beef \on them. Use hot; soapy .hater and rinse with 1 tbsp. bleach per gallon of water. And of course be sure to wash your hands . thoroughly and change your apron and hand towel after preparing raw meat. Do not stuff a turkey ahead of time. It may seem like a time-saver, but the dressing will be contaminated - being inside the' `bird delays cooling, making an en- vironment that is perfect for salmonella .bacteria to multiply., In fact the best way to cook • turkey (especially •the really ''big ones) is without dressing. The dressing can be cooked separately in a casserole or foil. Commercially frozen stuffed birds are safe as they are fast frozen. Follow the instructions printed on the wrapper. ,(Don't. attempt to freeze your own stuffed turkey as home freezers "aren't cold enough.) ' Microwaves can cook I turkeys but it is important that you consult your owners' manual for times and rotate the bird at in- tervals to ensure even cooking. The problem could even begin during thawing, Turkey should always be thawed in the refrigerator or in a sink of cold water. Never thaw it at room temperature. This can be a problem at holiday time when the space in the refrigerator seems to be full at all times. With refrigerators overloaded, it is easy to leave things that you would normally refrigerate out on the counter. Don't ! Try not to overload. If there are too many things in 'it, cooling will take longer and may not be able to keep the tem- perature down where it should be. Watch those large family dinners. It is so nice to just sit around after over a cup of Birthday Club coffee. But for safety's sake, jump right up and get those foods that need it into the refrigerator. The things to be most careful of are meats and things made from meats (dressing, gravy) and dairy products and any dishes made .. from them. Also beware of foods ' containing mayonnaise. Sticking to these few rules and using your own common sense will make Thanksgiving all the more enjoyable. ,Hi! • My name is Karin Mihian.'
