The Grade 1 and 2 classes at Holmesville Public School had a special guest on April 8
when Dr. Brian Nuhn from the Seaforth Veterinary Clinic brought his dog Taffy to the
school. Dr. Nuhn explained to the student what a vet does when a dog is brought in and he

Have an Easter Day brunch
Celebrate Easter with these delicious
Shrimp Curry Crepes. Crepes can be made
ahead and are ideal to serve for Easter
brunch. Leave the filling and the crepes
ready in the refrigerator. On Easter morn-
ing, after church or hunting for Easter eggs
take a few minutes to fill the crepes. Cover
the casserole dish and bake at 350 F (180 C
for 20 minutes or until hot and bubbly. Serve
with fresh fruit salad and hot rolls.
Crepes can be made several weeks ahead.
To store, stack six to eight crepes, placing
waxed paper between each. Wrap' and
refrigerate for up to three days. For long
term storage, wrap, label and freeze for up
to 3 months. When ready to use thaw at
room temperature about two hours before
separating crepes.
Shrimp Curry Crepes
1/4 cup butter (50 mL)
1/2 cup finely chopped onions (1`25 mL
1/2 cup finely diced celery 1125 mL)
1' 2 cups finely diced peeled apples ( 375 ml.)
2 tsp. curry powder 110 mLl

1 cup chicken broth (250 mL )

2 cans (7 oz. each) medium shrimp, drained

1/2 cup heavy cream (125 mL )
8-10 crepes (8-10)
Melt butter over low heat in medium
saucepan. Add onions and celery, cooking

and cook 5 minutes. Over.low heat stir in
flour until well blended. Gradually add
chicken broth and salt, stir constantly over
low heat until thick and smooth, about 5
minutes. Just before serving fold a shrimp
and cream. Spoon about 12 cup (125 mL) of
the filling into each crepe. Roll crepes and
place seam side down in ungreased 13 .x
9 -inch (3.5L) glass baking dish. Cover and
bake at 350 F (180 C.) for 20 minutes or until
hot and bubbly.
*Note: Chicken broth can he made by
dissolving 1 boullion cube in 1 cup 250 ml .)
boiling water or using canned broth.
Crepes
4 eggs (4 )
1/4 tsp. salt ( 1 ml.)
2 cups flour ( 500 mL )
2 cups milk ( 500 mi.)
1/4 cup butter, melted ( 50 mL )
Beat eggs and salt in medium mixing
bowl. Gradually add flour and milk alter-
nately to eggs, beating until smooth. Add
melted butter and continue beating until
batter is uniforrn..Let stand 1 hour.
Heat 1 tbsp. (15mL) butter or margarine
in 6-7 inch (15-17 cm ) frying pan over
medium heat until bubbly.
For each crepe, pour 1/4 cup ( 50 mi.) of
the batter into pan: immediately rotate the
pan until a thin film of batter covers the bot-
tom. Cook until light brown. Stack crepes
placing waxed paper or paper towel bet-
ween each. Keep crepes covered to prevent
them from drying out. Makes 15-20 crepes.
Easter ideas for
kids= egg: decorating.
Egg decorating can be fun for the whole
family. All you need is a few eggs, a little
imagination, and simple craft supplies like
glue, scissors, and thread.
To help you hop right into the Easter
spirit, here are a few egg decorating tips.
Eggs to be decorated should be either
hard -cooked or blown hollow. Hard -cooked
eggs are best for decorating by small
children, while blown eggs are more
suitable if you plan to keep there around for
several years. Be sure to use only non-toxic
coloring dyes, such as food coloring. on the
shells if the hard -cooked eggs are to he
eaten.
How To Blow Eggs
Wash and dry eggs. Pierce both ends of
the egg with a large needle. Slightly enlarge
the hole at the small end of the egg. Push the
needle well into the egg in order to break the
yolk.
Hold the egg over a bowl and with the
small end down blow into the hole at the op-
posite end until all the egg is removed.
Rince the shall with cold water and allow to
dry thoroughly. ( Use the raw egg for an
omelette. quiche, or scrambled eggs.
There are a number of paints that can be
used for egg decorating, such as tempera,
enamel, or poster paints. Commercial
Easter egg dyes, nail polish, and felt pens
are also effective. For a fine porcelain
finish, coat the egg with layers of white glue
diluted with water, allowing the egg to (try
between coats. Finish off with lacquer.
One easy way to color eggs is to add a few
drops of food coloring to hot water, along
with half a teaspoon of vinegar. Dip the eggs
in the colored water until tinted. Remove
and allow to dry.
Handy tip: thread a thin piece of wire
through the two holes in a blown egg. Bend

the wire at one end so the egg won't slip off .
This makes a handy tool for dipping the eggs
in the water and hanging them to dry.
A small plastic curtain ring glued to the
bottom of the decorated egg makes an ideal
stand. Other small household items such as
buttons or bottle caps can be used in the
same way.
After drawing designs or faces with felt
pen. let dry and coat with clear nail polish to
prevent smearing. Or. spray with
decoupage lacquer.
Pear nail polish will give a beautiful mar-
ble effect when used in place of varnish.
Ideas For Young Children
Color eggs with food coloring, or paint
Stick pre -glued stars onto the egg.
Dip an eraser attached to the end of a pen-
cil in paint. Stamp polka dots nn the egg to
form a pattern.
For a mother's day egg. glue a small pic-
ture of the child on the egg. Write the date
under the picture in felt pen. Decorate the
rest of the egg with rick rack.
For dip and dye eggs, stick a pattern of
masking tape on a plain white egg. Dip it in-
to the dye. When the egg dries. carefull\
remove the tape. Or try for a stained glass
look, glue small squares. triangle and strips
of colored tissue paper onto the egg overlap-
ping slightly. Allow the egg to dry Varnish
with clean nail polish or lacquer.
Dye the egg pink. Glue on miniature mar-
shmallows for leggs and a snout. Make a
curly tail from a pink pipe cleaner and ears
from pink pipe cleaner and ears from pink
construction paper. Draw eyes with felt pen.
On either white eggs or those dyed flesh
colors of brown, pink or yellow. draw faces
with felt pens. Add hair made from hits of
fabric or jewellery. Monster eggheads are
fun too.
