Chocolate Almond Shortbread Chocolate Peanut Butter Balls 1 1/4 cups (250 mL) icing sugar '/z cup (125 mL) chopped dates 3/4 cup (175 mL) butter, softened '/z cup (125.mL) chopped pecans 6 squares (6) Semi -Sweet Chocolate, melted 1 cup (250 mL) icing,sugar and cooled '/a cup (125 mL) chunky peanut butter 1 teaspoon (5 mL) vanilla 1 tablespoon (15 mL) butter, melted 1 cup (250 mL) all purpose flour 6 Squares (6) Semi -Sweet Chocolate 1 cup (250 mL) ground almonds 1/4 teaspoon (1 mL) salt 1 package (1) (175 g) Semi -Sweet Chocolate Chips 'Fa cup (125 mL) unblanched coarsely chop- ped toasted almonds Combine dates, pecans, icing sugar, peanut butter and melted butter; mix well. Shape into 1 -inch (2.5 cm) balls. Partially' melt chocolate over hot water. Remove from heat and continue stirring until com- pletely melted. Using a fork with long tines,. Cream sugar and butter until light and; place balls, one at a time in chocolate to fluffy. Add melted chocolate and vanilla; cover completely. Lift with fork and remove mix well. Combine flour, ground almonds excess chocolate on side of bowl. Place on and salt; mix well. Gradually add to waxed paperlined baking pan. Chill until chocolate mixture. Press into a 12 x 9 -inch, chocolate is firm. Store peanut butter balls in (30 x 20 cm) rectangle in 13 x 9 -inch (3.5 L)c about ai30rtight container in refrigerator. Makes pan. Sprinkle with chips and chopped almonds. Bake at 250°F (120°C) for 45 to 50 minutes. Cool; cut into bars. Makes about 48 pieces. Store in airtight container in cool place. Nutty Nuggets 25 caramels (25) 1 tablespoon (15 mL) water 1 cup (250 mL) sliced almonds '/z cup (125 mL) peanuts '/z cup (125 mL) pecan halves 2 squares (2) Semi -Sweet Chocolate Chocolate Melt caramels with water over low heat, stirring constantly. Truffles Noel 1/3 cup (75 mL) whipping cream 2 tablespoons (30 mL) butter 2 tablespoons (30 mL) sugar ,1/4 teaspoon (2 mL) vanilla 4 squares (4) Semi -Sweet Chocolate 3/4 cup (175 mL) chocolate or vanilla wafer crumbs, chopped nuts, tinted or toasted coconut, or grated Semi -Sweet chocolate Combine cream, butter, and sugar; bring to a boil over medium heat. Remove from heat; add vanilla and chocolate. Stir until melted. Chill mixture until firm enough to handle, about 3 to 4 hours. Drop by teaspoon- fuls (5 inL) amounts into desired coating. Roll into balls. Store chilled in airtight con- tainer in refrigerator.
