1 teaspoon (5 mL) vanilla 1 tablespoon (15 mL) butter, melted
1 cup (250 mL) all purpose flour 6 Squares (6) Semi -Sweet Chocolate
1 cup (250 mL) ground almonds
1/4 teaspoon (1 mL) salt
1 package (1) (175 g) Semi -Sweet Chocolate

ped toasted almonds
Combine dates, pecans, icing sugar,
peanut butter and melted butter; mix well.
Shape into 1 -inch (2.5 cm) balls. Partially'
melt chocolate over hot water. Remove

pletely melted. Using a fork with long tines,.

Truffles Noel
1/3 cup (75 mL) whipping cream
2 tablespoons (30 mL) butter
2 tablespoons (30 mL) sugar
,1/4 teaspoon (2 mL) vanilla
4 squares (4) Semi -Sweet Chocolate
3/4 cup (175 mL) chocolate or vanilla wafer
crumbs, chopped nuts, tinted or toasted
coconut, or grated Semi -Sweet chocolate
Combine cream, butter, and sugar; bring
to a boil over medium heat. Remove from
heat; add vanilla and chocolate. Stir until
melted. Chill mixture until firm enough to
handle, about 3 to 4 hours. Drop by teaspoon-
fuls (5 inL) amounts into desired coating.
Roll into balls. Store chilled in airtight con-
tainer in refrigerator. Makes about 2 dozen
truffles.
