Holiday fare for quick entertaining
Few of us want to think about the day
after a big holiday meal with all the trimm-
ings, but light and easy menu ideas can help
make that time especially enjoyable for
family and friends.
Creative, tasty appetizers can be
prepared in advance and be ready to serve
when unexpected guests arrive. For exam-
ple, a delicious recipe for stuffed eggs in-
cludes 10 hardboiled eggs (shelled) .1/2 cup
mayonnaise; one teaspoon prepared hot

mustard; a dash of Tabasco; one tablespoon
of liqueur Galliano, red caviar and green
pepper strips.
Halve the eggs lengthwise and remove the
yolks. Mash or sieve yolks, mix in mayon-
naise, mustard, Tabasco and liqueur
Galliano, blending until very smooth. Press
the yolk through a pastry bag into egg white
halves and garnish with red caviar and pep-
per strips. Makes 20.

which will require 36 hard shell clams ' 2 cup
white wine; two cloves garlic, minced; 1/3
cup minced parsley; 1/4 cup grated
Parmesan cheese; 1/4 teaspoon black pep-
per; 12 teaspoon oregano; two tablespoons
liqueur Galliano; two tablespoons olive oil
and 1/4 cup of bread crumbs. Place the
scrubbed clams and wine in a large, heavy
skillet, cover and steam over low heat until
shells open. Discard top shells and arrange
in a shallow baking dish. Mix the next five
ingredients and spoon over clams. Combine
the liqueur Galliano and oil, sprinkle over
clams, and then sprinkle the bread crumbs
over all. Bake in 425" over for eight minutes.
Serves six.
A simple recipe of fish in wine sauce is a
delightful alternative for guests who have
tired of holiday turkey and "all the trimm-
ings" Ingredients include 1'/z tablespoons
lightly salted butter or margarine; a clean-
ed, scaled red snapper, weighing about two
pounds; a few grains each of salt and pep-
per; one large sliced tomato; one small
onion, peeled and sliced; four lemon slices
3/4 cup of white wine (dry); 1/8 teaspoon
dried oregano leaves; one bay leaf; one cup
heavy cream and 11/2 teaspoons cornstarch.
Heat the oven to 350°F and butter a
13x9x2-inch baking dish with 1/2 teaspoon of
the butter. Sprinkle fish inside and out with
salt and pepper and place fish in baking
dish, dotting with remaining with remaining butter. Ar-
range tomato, onion and lemon slices
around and on top of the fish. In a small
bowl, combine wine, oregano and bay leaf,
and pour over fish. Bake 30 to 40 minutes,
until fish is translucent near the bone.
Transfer fish to a heated serving platter and
strain pan juices into a small saucepan. In a
small bowl, mix heavy cream and cor-
nstarch until smooth; stir in wine mixture.
Cook over low heat for five minutes, stiring
constantly with wire whisk or wood spoon
until mixture boils and thickens. Pour over
fish and garnish with lemon wedges, dill and
olive slice. Makes two hearty servings.
To top off the light meal, serve guests a
Florenza Liqueur, the hazelnut liqueur from
Italy. Add 1/ oz. Florenza 3/4 oz. Barbar -
dos dark rum and one scoop raspberry
sherbet and crushed ice to a blender. Blend
until smooth. Service in chilled glasses, gar-
nished with three berries.
