Food facts
Pickling
Q. What is the white sediment in the bottom
of pickle jars?
A.Clouding is normal in naturally
fermented pickles; the white sediment is a
harmless residue from fermentation. If this
occurs with fresh pack pickles and the
pickles are still firm, they are safe to eat.
Q. What causes garlic, onion and
cauliflower to change color ager pickling?.
A. They contain , colorless igments that
easily become coloredin ari acidic environ-
ment. When vinegar (acetic acid) is added,
garlic may turn blue or purple and
cauliflower and onions may turn pink.
Garlic may turn green if it is not fully
mature or thoroughly dry. They are still
safe to eat, since this reflects a natural color
change rather than spoilage.
