cake (also known as sponge cake) with a
soft buttercream icing, are all popular
alternatives. But despite their different
tastes and selections, all bridal couples
share one thing in common: They opt for
the traditional white icing, symbolic of
the bride, on their wedding cake.
The traditional 6 -8 -10 -tier cake can be
made with square or round layer's. The
bottom layer is usually 10 inches and will
feed 80 to 85 people. The muddle layer,
which is 8 inches, serves 50 to 55'and the
top 6 -inch layer will serve 30 people.
The top layer of fruitcake, also called
the groom's cake, is often frozen and con-
swiied at the first anniversary or
christening. Sonic couples elect to have a
different kind of cake on each layer,
reserving the top layer for the fruitcake
For an average wedding of 80 to 100
people, the 6 -8 -10 -tier cake will do nicely.
Couples with smaller weddings will often
order a bottom layer of styrofoam.
Known as the display layer, it is frosted
to look like the rest of the cake and is so
authentic that guests can never tell the
difference.
Another avenue that couples chose is to
rent a fake cake for their cake cutting
ceremony. Small pieces of groom's cake,
individually wrapped in cellophane, are
then passed out to guests in remem-
brance of this special occasion.
Legend has it that the bridesmaid who
tucks one of these pieces into her purse
hastens her wedding. Wedding guests
who tuck a slice under their pillows are
said to dream of the person that they will
inarry, says Prichard.
Another factor to be considered is the
time of year you're holding your wed-
ding.
If you're holding your reception outside
on a hot summer's day, custard fillings
carry the risk of becoming tainted. Bet-
ter to go with a buttercream icing, which
holds up better than other frostings under
the bright lights of flashes and video
lighting. In keeping with a summertime
theme, some couples, enjoy an ice cream
cake at their outdoor weddings.
Toppings on the cake differ with each
customer. Couples in their early 20s often
prefer the traditional bride and groom
1110 figurines on top. Older couples who are 27
and up gravitate toward the more
sophisticated trim of bells, birds and
flowers. Instead of flowers made out of
frosting, some couples are choosing silk
flowers to go on top of their cake.
Anything goes for, wedding cakes —
from the cake down to the trim and or-
naments. Some want a traditionally trim-
med cake using a few soft colors while
other customers go for broke and order
every color imaginable on their wedding
cakes.
And trim isn't only in the shape of
roses on each corner. You're just as like-
ly to find carnations, petunias made out
of icing or even silk or real flowers. Real
flowers are placed on the cake at the last
minute to keep them fresh looking.
