Some 30% of North American coffee drinkers have switched to decaf,
according to Newsweek.
The process of decaffeination was discovered at the tum of the century' by a
German, Ludwig Roselius, who washed ,whole coffee beans int a strong
chemical solvent, removing 97% of the caffeine. At one time or another since
then, benzene, chloroform, acetone, ethyl alcohol and ethyl ether have been
used to remove caffeine. However, because some of these solvents left
potentially harmful' residues in the beans, new methods of caffeine extraction
have been sought for nearly 80 years. TODAY, METHYLENE CHLORIDE IS
THE PRIMARY CHEMICAL USED TO EXTRACT CAFFEINE.
About 10 years ago, the Swiss developed a revolutionary method to remove
caffeine using ONLY WATER; whole,. raw beans are soaked in hot water,
leaching out the caffeine and volatile oils. The water is then passed through
activated charcoal to remove the caffeine; the beans are then,retumed to tthhe
