Combine milk, water and V2
margarine in a saucepan and
heat over low heat until liquids
are warm (120E -130F).
Margarine does not have to
melt. Gradually add liquid
mixture to flour/yeast mixture,
beating for 2 minutes at medium
speed of an electric mixer,
scraping bowl occasionally.
Add 2 eggs and 1 cup more
flour, or enough flour to make a
thick batter. Beat at high speed
minutes, scraping bowl
ionally. Stir in enough
our to make a soft dough. Turn
out onto a lightly floured board
and knead until smooth and
elastic (8 to 10 minutes).

Place dough in*a greased
bowl, turning to .grease top.
Cover dough and let rise in a
warm, draft -free place until
doubled in bulk (about 50
minutes).
Punch down dough and turn
out onto a lightly floured board,
Knead in citron, raisins and
chopped almonds until well
distributed. Divide dough into 4
equal pieces and set 2 pieces
aside. Divide one of the pieces
into 3 equal strips, about 14
inches long.
Place 3 strips on a large
greased baking sheet and braid
together. Brush top of braid with
melted margarine.
Divide two-thirds of second
piece into 3 equal strips, each
about 12 inches long, and form
into a second braid. Place on top
'of first braid and brush top with
melted margarine.
With remaining one-third of
second piece of dough, make a
third braid, about 10 inches
long, and place on top of second
braid. Brush top with melted
margarine.
Repeat process with two
pieces of reserved dough. You
will now have two loaves, each
consisting of three stacked
braids, largest braid on the
bottom.
Cover loaves and let rise in a
warm, draft -free place until they
are doubled (about 1 •hour).
Beat remaining egg and 1
tablespoon water together until
well blended and brush braided
loaves with mixture. Decorate
loaves with whole almonds and
bake at 375F for 35 minutes, or
until done. Remove breads from
baking sheet and cool them on
wire racks.
Yield: 2 loaves.
Panettone is an airy round loat
dotted with raisins, citron and
pine nuts (pignoli) and flavored
with anise seed. Traditionally it
was an Italian Christmas treat.
Now it can be seen at Easter
too. It's richly delightful as is,
but heavenly when spread with
butter for breakfast, dessert or at
tea.
SPICED POLISH BASICA
5 cups all-purpose flour,
divided
3/4 cup sugar
2 envelopes dry yeast
4 teaspoons ground cinnamon
11/2 teaspoons ground nutmeg
1/2 teaspoon ground cloves
1 teaspoon salt
3/4 cup milk
3/4 cup butter or margarine,
softened and divided
2 whole eggs
4 egg yolks
1 tablespoon vanilla
2 cups golden raisins

In a large mixing bowl
combine 11/2 cups of the flour
with sugar, yeast, spices and
salt: mix well. In a small
saucepan combine milk and 1/2
cup of the butter; heat over low
heat until very warm (130F).
Add to yeast mixture; beat 2
minutes, using medium speed of
electric mixer, scraping bowl
occasionally. Add '/2 cup of the
flour, eggs and egg yolks,
vanilla extract and remaining 1/4

cup butter; beat at 'high speed for
2 minutes. Blend in remaining
flour and raisins.
Knead 10 minutes on a
floured board. Place dough in a
buttered bowl, turning to butter
the entire surface. Cover lightly;
let rise until doubled in bulk,
about I hour. Punch down, and
place in a 10 -inch buttered bundt
or tube pan. Let rise until dough
nearly reaches the top of the
pan. Bake in a preheated
moderate oven (350F) 35 to 40
minutes. Remove from pan; cool
on a wire rack. If desired,
dribble with confectioners' sugar
frosting. Slice and serve.
Yield: one I0 -inch sweet
bread.
Finnish Viipuri is another
cardamom -flavored Christmas
bread. This dough is formed into
a pretzel shape.
