Here's a suggestion for a
zippy ;ucchini soups that
Aso gives you the zest of
Canadian cheddar and the
goodness of milk.
4 stips bacon
1/2 cup (125 mL) finely
chopped oinion
1/4 (50 mL) cup
chopped green pepper
2-1/2 cups (625 mL)
zucchini, cut in 1/4
inch/6 mm slices
1 tablespoon (15 mL)
chopped pimento
1 cup (250 mL) water
1/2 teaspoon (2 mL)
salt
1/4 cup (50 mL) butter
1/4 cup (50 mL) all-
purpose flour
1 teaspoon (5 mL) salt
1/4 teaspoon (1 mL)
pepper

1/2 teaspoon (2 mL)
Worcestershire sauce
1 cup (250 mL) shredded
Canadian Cheddar
cheese
Cook bacon until crisp in
skillet; set aside for gar-
nish. Saute onion and
green pepper in bacon fat
' until tender. Add•zucchini,
pimento, water and salt.
Cover; bring to a boil, turn
down to simmer and cook
about 5 minutes or until zuc-
chini is tender. Meanwhile
prepare cheese soup base.
Melt butter in a 3rquart(3L)
saucepan; blend in flour,
2-1/2 cups (625 mL) salt and pepper. Remove
milk from heat; stir in milk and

Worcestershire sauce. Heat
to boiling, stirring con-
stantly. Boil and, stir 1 min-
ute. Remove from heat; stir
in cheese until melted. Re-
turn to low heat to finish
melting if necessary. (Do
not boil.) Add vegetables
with liquid to soup base.
Heat to serving tempera-
ture. Garnish with
crumbled bacon.
Makes about 6 cups/ 1.5
L.
Note: additional milk may,
be added to achieve desired
consistency of soup.
