Make the right cut
Moose! Crisp clear days and frosty nights.
Good clean air; huge meals for big ap-
petites; a week in the bush in pursuit of the
mighty monarch; all of this is part of moose
hunting, but at the sound of the shot, the fun
ends and the work begins.
Every year a good portion of the meat ob-
tained from moose is wasted and lost due to
improper handling. It's not surprising. Most
hunters are very concerned about getting
their moose home in good shape and stock-
ing up their freezer with that excellent
meat, but conditions in the bush are quite
variable, and the majority of us aren't pro-
fessional butchers. Improper cutting, handl-

some _ control over, R. we -have the
knowledge. That's where Roger Fortier and
the National Meat Institute step into the pic-
ture. "The Moose - From. Forest to Table" is
in its third printing, and does an excellent
job of describing just about everything there
-- , is to know-about..getting ._your moose to the
freezer in the best possible condition.
The book starts out by giving a quick
description of hunting techniques and equip-
ment before it goes into detailed descrip-
tions of what to do "after the shot". Methods
for evisceration and caping out the trophy
are detailed with excellent pictures and
diagrams and are accompanied by charts to
determine original live weight, etc.
A moose is a big animal, and it is seldom
practical to transport it in one piece. Accor-
ding to Roger, this is the best method
whenever possible, but if you are on a fly -in
hunt, or looking at a long begat trip out, then
sectioning the moose is the best way. Meat,
.. however, can also be lost as a result of im-
proper cuts, but by. using -Roger's diagrams,
proper "butcher's" cuts can be made to
reduce this possibility. Using his charts, a
moose can be easily divided into two, four,
quired for convenient transportation. It
must always be remembered, however, that
the more cuts that are made, the more flesh
is exposed to drying, flies anddirt, and will
result in further trimming in the final pro-
cess.
Once the moose is home, a professional
butcher can process your meat, or it can be
done by the hunter by following instructions
in the book. The directions 'are straightfor-
ward, and tips in regard to freezing, etc. are
also included.
A collection of excellent recipes for serv-
ing your feast make up thelast section of the
book `(including even a couple of methods
--fur -preparing-•moose -lose).- There .is..bound,
-- be-- something- whieh will appeal -to
everyone in this section, and just reading it
over makes my mouth start to water.

pounds of roasts, chops, steaks and ground
meat from a 200 pound whitetail buck? Did
you know that a whitetail from farm country
is -much -mor-e-tender-than abush country
deer because they tend to be less nervous
than their forest dwelling counterparts?

you've pulled the trigger. Besides outlining
the proper way to field dress a deer, the
manual shows; in step-by=step pictures and
instructions, how to get the best cuts from
the deer along with the proper way to age

Clinton Peewee A's defeat Winghain in serni-a.al aetion
The Clinton Peewee A's picked up a win
and a tie last week in their three game,
total -point series with Wingham.
Clinton opened the series on Jan. 31 with a
2-1 win in Wingham. The game featured
good, close checking and was decided in the
final period.
Devon Colquhoun, who has scored seven
goals in two games, opened the scoring with
4:57 left in the period. Colquhoun skated
through the entire Wingham team and
scored the unassisted goal. The period end-
ed with Clinton clinging to a 1-0 lead.
Jeff McGee deadlocked the score in the se-
cond period as he snuck one by Mike Ladd
with assists going to Jason Coultes and
Peter Strog.
Derek. Jefferson's goal with 4:44 left in the
game gave Clinton the win. Jefferson's goal
came on a three-way passing play involving
Curtis McCone and Colquhoun.
Clinton's Ladd played a strong game
-between the pipes -to preserve -the victory.

. J Wingham scored two goals in the final five
minutes to salvage a tie and their season on
Feb. 2 in Clinton.
Wingham held a 2-1 lead after one period
but found themselves behind 5-4 at the end of
two. Colquhoun scored for Clinton, assisted
by Mike Corrie and Wingham countered
with twa`goals by JeffMcKeeiri t`rie opening
period.
Colquhoun opened the scoring in the se-
cond period at 14:16 with an assist going to
Jason MacLean.
The rest of the period featured .a scoring
derby between Colquhoun and Wingham's
Jason Coultes. Colquhoun scored an
unassisted tally at 12:27 and Coultes came
back moments later to tie the score. Col-
quhoun scored again with two minutes left,
and again, Coultes countered. Colquhoun
added his fourth of the period with 53
seconds left, unassisted.
Coultes scored at the 12:36 mark of the
third period. The see -saw continued two
minutes later as Colquhoun scored his
fourth, unassisted goal of the.game. Clinton
went up by two with just over five minutes.

assisted on the goal.
Jeff Tolton, at 5:01, and Joe Walker with
1:03 remaining finished out the Wingham
scoring.
Peewees lose in Walkerton
Clinton was eliminated in the Walkerton
Canadian Legion Championships last Satur-
day as they lost 2-0 to Hespeller.
Houseleague Peewee Punkers win

Peewee Punkers travelled to- Exeter and
edged the hosts 2-1.
The Punkers only dressed 10 players and
played spectacular in overcoming Exeter's
first period lead.
Andrew Dykstra and Darryl Hemingway
scored for Clinton in the second period.
The teams Battled -to a scoreless tie "in the
third period as Punkers' Kent Rathwell
played fantastic in goal.
The win improved the Clinton Punkers
record to an impressive 8-1-2.
The Ptinkers suit up for action again this
Saturday in Clinton at 1 p.m.
Novice slam Goderich 5-1
Goderich Novice "A" hosted Clinton last
Saturday afternoon and were defeated 5-1..
' " The opening goal came in the first period
when Mark LiV'ermore shot one past the
Goderich goalie. The assist went to Lee Gib-
bings and Shane McDonald.
Later in the first period, Goderich came
back tamake it a 1-1 tie. David Boyce scored.
Clinton. Atoms drop two one goal hockey games
Last Saturday night the Mitchell Atoms
• came to Clinton to take on the locals. It was
a very exciting 'contest as Mitchell skated to
a 2-1 victory.
After a scoreless first period, Mitchell
opened up a 1-0 lead in the second period at
the 3:56 mark when a shot by Mike Miller
deflected _ off the stick of Clinton's Greg
Crawford behind • the startled Clinton
goaltender, Darren Stevenson.

Jason Fleet: scored a powerplay goal with
assists going to Ken Settles and Jason
Carter.
Just two minutes later Mitchell scored the
eventual winning goal by Warren Scherbar-
th. Clinton's goalie Darren Stevenson turned
in another strong game in goal. Clinton's
defence, Jason Fleet, Matt Townsend, Scott
Rathwell and John Bezaire also played very
well defensively. .
In Hensall on Monday night the Clinton
Atoms went down to their second con-
secutive defeated by a one -goal margin..
This time Hensall nipped them by a 3-2 score
as the Winning goal came off the stick, of
Chris Gardner with only three seconds left
in the game.
