Southern Hoe Clake-One cup of corn
meal, 'sifted; 1-2 teaspoonful of salt,
and scald, it with boiling water, stir-
ring all the time. It should be just
thick enough not to run when you put
it on the griddle. Hoe cake cannot be
cooked. too long, but it must not burn,
and the griddle, must be greased with
salt pork. Pet it on in a. large round
qa.kes, 1 incliSthick, pat it smooth and
cook slowly. As soon as one side
browns, turn it over and brown the
other side, baying first put a small
lu,mp of butter on top.
My 1VIctlier's Corn Meal Muffins -
One -half pint of, sweet milk, one-half
pint of flour, one-half pint of corn
meal, one-quarter cup of butter, one
egg, one-half teaspoonful of • salt and
one and one-halite:teaspoonfuls of bak-
ing powder. Sift baking powder in
flour, add, id it meal and butter, yolk
of egg, salt and milk; mix well togeth-
er and last; of all add the stiff -beaten
white of egg; pour this mixture into
a dozen well -greased muffin gems, and
bake in, a quick oven.
Sally Lunn -Take one quart of flour
and sift it. To one quart of milk
add one-half oup of warm water, and.
stir into the sifted flour; take two
eggs and bent'separately; add sugar
to the desired! taste to the yolks of
the eggs. After eggs are well beat-
en, add therm to the batter; dissolve
a small natal oake in batter and beat
well; then put it to rise, and after at

In the working of these diamond
mines there are employed about 1,-
500 white men and 6,000 natives. The
greater proportion of these raen are
employed in the De Beers and Kim-
berley naineis

area at the surface of thirteen acres
and a depth of .450 feet. The mines
are worked from shafts sunk some dis-
tance from the original holes and pene-
trating to the blue earth by trans-
verse drivings at depths varying from
500 to 1,200 feet. The blue earth, when
extra,cted, is carried in small iron
trucks to the levels. Upon these lev-
els the blue earth is worked until the
gems within • are extracted. The pee-
ce,s6 of extracting takes from three
to six months. The stones found very
in size from a, pin head to the largest
ever -found -428 1-2 karats. This larg-
est stone, when cut -weighed 228 1-2
karat.s. It is one of the experiences
of the mine ownens that they lose
from 10 to 15 per cent of their product
each year through the thefts of em-
ployes, who, although closely watched,
'still manage to get away With their
loot. The punisbntent for stealing a '
diamond is fifteen years imprison-
ment. All ditemond,s except those
wbich pass through illicit channels,
are sent to Englandthe weeklev ship-
ments averaging from 40,000 to 50,000
karats. The greatest outlet for stol-
en diamonds is through the Transvaal
to Natal, where they are (shipped by
reerpectable merehnnts.
