FESTIVE ROAST PORK
1 pork roast, 4-6 pounds, boned
and rolled (loin, shoulder butt
or fresh leg)
1 clove garlic
2 teaspoons fennel seed
2 ,, teaspoons dill ;seed
2 tableapooris brown sugar
1 ;teaspoon thyme
1 teaspoon salt
1, teaspoon pepper
11/2 -cups finely chopped parsley
1/2 cup parsley flakes
Basting sauce:,
Syrup from 19 ounce can
apricot halves 1./4 Cup
Untie roast; open flat. 'Cut
two or three lengthwise slashes
along the thickest part L to
within.11/4 inches of outer edge.
'Chop and crush garlic adve,
fennel and dill seeds together;
thoroughly blend with brown
sugar, thyine, salt and pepper.
Rub mixture. into •pork from
- one end to the other and. into
slashes. Cover with parsley to
make inside of rOast look like a
"green lawn". Roll as before
and tie'firtnly at two three-inch
intervals into original shape.
Place pork roast fat side, up -on
rack in shallow roasting pan.
Insert meat thermometer into
centre of , meat. Roast, un -
.covered in 325°F. oven,
allowing 35 minutes per pdund;
baste every 20 minutes during
last hour of cooking. Pork is
done when thermometer 'reads
f'70° internal tgeperature. Let
roast sand on warm platter
about 15 minutes to make Car-
vings. Serve this handsome
roast hot or cold for a sit-dOwn
dinner or for a serve -yourself
buffet.

MAT'S NEW AT HURONVIEW
The annual Christmas Fair
sponsored by the Huronview.
Auxiliary was held in ..the
Auditorium on Monday.. The
residents have an opportunity
to do some Christmas shopping
at the fair from the tables of
gifts that have been donated by
various organizations in the
County. Refreshments were ser-
ved the craft room during
the Afternoon by ,the auxiliary.
The residents enjoyed their
first Christmas program of the
season on Wednesday after-
noon at the December Birthday
Party. The Walton Women's
Institute was hosts for the 'oc-
casion and following the
program, gifts were preaented to
the celebrants with decorated
cup cakes and tea served to 150
residents and guests.
Mrs. Neil McGavin was em-
cee for the. afternoon and led a
sing -a -long of Christmas music;
Mrs. Rrmnerson Mitchell, Mrs.
Harold McCallum and Mrs.
Humphries played several in-
strumental numbers; vdcal
duets by Mrs. Herb Travis's and
Mrs. McGavin; a reading by
Mrs.. Frank Kirkby; and a
Christmas Story narrated by
Mrs. Harvey Craig completed.
Miss Turner,' who is
celebrating her ninety-eighth
birthday'in December, thanked
the institute for the fine enter-
tainment . and) party on behalf
of the residents.
The senior and junior
rhythm bands from the .,
Gode-rich Psychiatric _Hospital
entertained with a .Christmas
concert, on Pami_ly Night. Mr.
Gordon Harrison of, Goderich
leads and plays the piano ac-
companiment for the bands and

solos, vocal solos, duets and a
quartet. Miss Sarah Carter
thanked the entertainers.
