Put cranberries on your holiday table
•••
You can, tell a „good berry by
its bounce -a cranberry, that it.
Packing plants actually use this
characteristic .to test for.
quality. A good firm cranberry
will bounce, whereas a soft
berry won't. Only the lively
berries make it 'to your hofne.
The eranb r is a native
fruit of Northmerica: Early
colonists named the fruit
"cranberry" because the sten,
der curved Stems and flower
resembled the neck and head of
a crane: Later the name was
contracted to cranberry. Even
though the fame of the cran-
berry has spread to Europe, its
,cultivation is still almost en-
tirely confined to our continent.
The lingonberry is xrEuropean
cousin.
Cranberries are commercially
grown in British Columbia,
Quebec,. Nova Scotia and -
Prince Edward Island with a
few in Ontario. They require
moist, cool conditions and
special care. The fruit ripens in
late October, ensuring a peak
supply .throughout November
and December.
This is the time to stock up
on them. They 'will keep
refrigerated in the original
package for two weeks. For
.longer storage, wash them,
discard stems and bruised
berries, dry and freeze in air-
tight plastic bags or containers.
They don,' t require thawing
before cooking.
Although cranberries are
traditional for Christmas, it's a
good idea to have a supply on
'hand all year around. The
berries add a distinctive color
and flavor to beverages,
relishes, salads, pies, -cakes,,
cookies, bread and muffins.
When cooking these''bercies, be'
careful not to overcook. Simply
heat until they, "pop" .often.
Cranberries go well with
many fruits, especially apples.

Agriculture Canada have come
up w,ith two zesty com-
binations. "Crunchy Cranberry
Salad" is2a shimmering mold
made with apple juice- and
cranberries. Plan to serve this
salad' with roast turkey or
chicken. "Cranberry Apple
Crumble" is an easy dessert,
pairing fresh cranberries with
apple pie filling under a crun-
chy topping.. -
CRUNCHY CRANBERRY
SALAD
1 envelope unflavored gelatin
2 cups apple juice
1 t/2 cups cranberries.
114 cup sugar
Dash salt
114 'cup chopped celery
1'4 cup chopped walnuts
Soak gelatin in 1/4 cup apple
juice five minutes. Combine
remaining juice. cranberries,
sugar and stilt and cook. until
skins of cranberries begin to
pop. Add gelatin and stir until
dissolved Chill until partially
set. Fold in celery and walnuts.
Pour inti, 4-, up mold and chill
until firm tabour three. hours),
Sere unmulded with sour
cream. Six servings.
CRANBERRY APPLE
CRUMBLE
1 19-ounc e tan apple pie filling
2 cup, ranherries
1 cup 4igar
1:1 cup all-purpose flour
' 1 Clap rolled oat.
2/1 cup brown sugar
-1/1 cup butter

Combine pie filling, cranberries
and 'sugar. Turn into greased
bilking dish. Cover and bake 30
minutes at 325?F. Combine
flour, Milled gats and brown
sugar. Cut in butter until mix-
ture resembles. coarse bread
vrumbs. Sprinkle over Tran-
berry apple mixture. Bake un-
covered ;3U minutes more. Six-
servingS.
