soup of Danish origin. "Chilled
Cucumber Soup" is a superb
blend of cucumbers, chicken
bouillon and milk.
CHILLED CUCUMBER SOUP
:3 medium cucumbers
1i2 cup chopped onion

1/4 easpon pepper
3 cups„Fhicken bouillon
3 •cups milk
• Peel,. and seed cucumbers.
Shred 1/3, cup cucumber .for
garnish. Cut remainder in 1/2
inch slices and saute with
onion and carrot in butter
about' 5 minutes. Stir in flour
and seasonings. Gradually add
bouillon and milk,. stir and
cook until soup thickens (about
5 •minutes): Pour into blender
and blend until smooth. Chill.
Garnish with shredded cucum-
ber. Serve 'very cold. Makes
about 6 cups.

Look for freshly picked ears
with bright green husks tightly
wrapped around plump, milky
kernels. Buy for quick use,
otherwise the texture and sweet
juicy flavor decrease with
storage.
Most sweet corn is 'hydro -
cooled to nwerve its freshness.
At home i should be kept
refrigerated, unhusked, until
ready for cooking. Boiled and
dripping with butter, wrapped
in foil from' the barbeetie, or cut
from the cOb and combined
with other vegetables, any way
it's served, fresh sweet corn is
great.
Food Advisory Services,
Agriculture Canada, suggest
"SkiTretCorn" for the kitchen
or the campfire. The crisp
bacon and tender onion and
green pepper provide flavor,
color and texture contrast. '
SKILLET CORN
4 ears of corri•(3 cups kernels)

6 slices -bacon
1/3 sup chopped green pepper
1/3 cup chopped onion
1 teaspoon salt
Dash pepper
Green pepper rings
Cut raw, kernels from cob.
Fry bacon until crisp, remove
from pan, drain and crumble.
Add corn, green pepper and
onion to drippins. Cover and
cook gently until tender (8 to
10 minutes). Season with salt
and pepper, Garnish with
crumbled bacon' and green pep-
per rings. 6 servings.
•Squash -a treat to freeze
Recent tests carried out by
Food Advisory Services,
Agriculture Canada,, show that
zucchini (summer squash) and
Butternut, Acorn and Hubbard
squash (winter squashes) can
be frozen successfully.
Following.is a summary of the
preparation required for
freezing and for cooking the
various types of squash.
Zucchini -Wash zucchini and
slice into 1/4 -inch slices; blanch
for two minutes, -chill
thoroughly, pack dry, and
freeze. Before serving,. thaw for
five minutes and cook in
boiling water •for 1-2 to 18
minutes depending on the size
of the slices.
Butternut Squash - • Peel
Squash, dice and blanch for
two •minutes. Chill quickly,
drain and pack dry for freezing.
To serve,. cook for 7 to if
minutes in boiling water. An
alternate method is to cook the
squash until tender, cool
quickly, mash or sieve and then
freeze. It is only necessary to -
reheat squash, frozen in .this
way.
Acorn Squash - Cut squash
in small pieces and steam, boil
or bake nntil. tender... Cool
quickly, mash or ieve and
freeze. Reheat before serving.
Hubbard Squash Follow the
same method as for the Acorn '
Skttash and reheat in the,top of 4
-a' double boiler before serving.
