Strawberry crepes
are elegant treat

It's hard to beat
trawberries and cream as the
all-time favourite dessert com-
bination - but. if you.are looking
for a dinner party finale that is
truly an attention getter try
Strawberry Crepes..
For small dinner parties, try
Strawberry Crepes. You won't
believe how easy • they are to
prepare - -but do believe the
complitnents. they'll bring.
2 eggs
1 package (4 serving size)
vanilla pudding and pie filling
fresh
strawberries
Sugar.
Beat eggs with a rotary
beater, electric mixer, or in an
electric blender until very light
and frothy. Add pudding mix
and cream, mixing well. Pour
1/4 cup of the batter at a time
into hot, well -buttered 10 -inch
frying pan. When golden
brown, turn to brown other
side.. Spoon strawberries' into
centre of each crepe, sprinkle
with sugar, and roll up. Gar-
nish with prepared whipped
topping and additional sliced
strawberries, if desired. Makes -
5 strawberry crepes.

3/4 cup sifted cake flour
374 teaspoon baking powder
,1/4 teaspoon salt
4 eggs (at room temperature)
3/4 cup sugar
1 teaspoon vanilla
1 package strawberry or van-
nila whipped dessert mix
1/2 cup cold milk
1/2 cup cold light cream
1/8 teaspoon almond extract
1 cup currant jelly
Sliced fresh strawberries (op-
tional)
Sift flour with baking powder
and salt. Beat eggs in large
bowl with rotary beater or at
high speed of electric mixer.
Add sugar. gradually and beat
until mixture becomes fluffy,
thick, and light-coloured.
Gradually fold in flour, then
vanilla. Pour batter into
15x10xl-inch jelly roll pan
which has been greased on bot-
tom and sides; then line on bot-
tom with paper and grease
again. Bake at 4000F for 13
minutes: Turn cake out onto
- rack, quickly remove paper,
and turn cake right side up.
Trim off crisp edges and cut
cake crosswise into 4, layers.
Cool about 30 minutes.
In small, deep, narrow bowl,
thoroughly blend dessert mix
with milk. Whip at highest
speed of electric mixer 1
minute -mixture will be very.
thick. Blend in light cream.
Whip at high' speed about 2
minutes. Fold in almond ex-
tract. I( necessary, chill until
mixture will mound --about 10
minutes.
Meanwhile, beat jelly lightly
with a fork to soften. Spread
the jelly between the cake
layers. Frost top and sides of
cake with prepared dessert mix.
Chill 3 hours or more. Just
before serving, garnish with
strawberries. Makes about 10
servings.
• For brunch, serve this color-
ful and attractive skillet dish:
saute chopped green pepper,
onions and cut-up sliced
bologna until onion is tran-
sparent using butter or bacon
drippings. Remove with a slot-
ted spoon to a bowl and brown
hash brown potatoes in drip-
pings. Add the sauteed mixture
to the potatoes alopg with eggs
and milk beaten together as for
scrambled eggs. Sprinkle with
salt and pepper and cook,
covered, about ,5 -to 10 minutes
until eggs are set. Cut in
wedges to serve.
