TME RECIPE BOX
Lovely scoops of Ica cream, alone or topped with anything
from fruit to nuts, area delight to both the aye and the
taste buds. Food Advisory Services, Agriculture Canada
have two new sauces to enhance the delicate flavor of Ice
cream- The ."Rum and Raisin Sauce" and "Fruit Sauce"
are quite a surprising and pleasant addition to everyone's
"all-time favorite" dessert.
Ice cream goodies
Not so long ago many a sum-
mer Sunday afternoon was
spent making ice cream in a
wooden freezer. Turning the
freezer crank was hard work
and tiring, but the reward was
rich and satisfying. Today with
commercial ice cream available
in a wide variety of shapes,
sizes and flavors, we are indeed
fortunate.
Ice cream is made from milk
solids, sugar and flavorings.
This mixture is pasteurized,
homogenized, frozen and whip-
ped. A stabilizer may also be
added to improve the body of
the ice cream, to make it
smooth by keeping the crystals
small and to give it more
resistance to melting. Accor-
ding to the Food and Drug
Regulations ice cream must
contain at least 10 percent milk
fat and 36 percent milk solids.
Ice milk is also available and it
must contain a minimum of 3
percent milk fat and 33 percent
milk solids.
To enjoy it at its best, ice
cream should be stored at 0°F
or lower and- should be kept
tightly wrapped. A small piece
of foil, wax paper or tran-
sparent wrap pressed against
the surface will prevent a
gummy layer from forming on
top of the ice cream after some
has been taken frokn the con-
tainer.
For optimum quality ice
cream stored in the freezer' at
0°F should be used within six
weeks of purchase.
From the informality of a
cone to an impressive parfait,
ice cream is a pleasure that we
never outgrow. Its smooth,
creamy texture and delicate
flavor make it one of the "all-
time fav•ites" in Canadian
homes.
The home economists,
Agriculture Canada suggest
two sauces to .serve with ice
cream. The "Rum and Raisin
Sauce" and "Fruit Sauce" are
a pleasant change from the
traditional and provide the per-
fect companion for ice cream.
RUM AND RAISIN SAUCE
1/2 cup seedless raisins
1/2 cup rum
1/2 cup sugar
1/4 cup water
1/4 teaspoon cinnamon
1/2 teaspoon grated orange
rind
1/2 teaspoon grated lemon rind
1/4 cup chopped nuts
Soak raisins in rum until
plump, (about 2 hours). Com-
bine with remaining
ingredients except nuts and
cook 2 minutes. Add nuts; serve
warm- over ice cream. Makes
about 1 cup.
FRUIT SAUCE
2 teaspoons finely grated
orange rind
1 teaspoon cornstarch
1/3 cup sugar
1/4 teaspoon ginger
1/2 cup orange juice
2 tablespoons butter
1 teaspoon lemon juice
1 14 -ounce can peach halves,
drained
1 14 -ounce can pear halves,
drained Vanilla ice cream
Combine orange rind, corn-
starch, sugar and ginger. Blen
in orange juice. Stir and coo
until thick and clear. Stir in
butter and lemon juice. Add
fruit. Cover and cool. Serve
over vanilla ice cream. Makes
about 3 cupa. 6 servings.
Burgers for the grill
With glorious summei~ days
ahead, thoughts turn to butter-
flies, flowers, swimming, pic-
nics and of course outdoor bar-
becues. It is hardly necessary to
praise the merits of barbecuing,
for anyone who has tried it
knows of the marvellous food,
fun and friendship which go so
well with such an occasion.
Good food is always the star
at any barbecue and this year is
a great .time to try something
new. Steaks, chops, chicken and
turkey parts and naturally
hamburgers have always been
popular candidates for the grill.
However, other ground meats
should have a place in outdoor
cookery.
Once you have tasted
'burgers' made of ground
turkey or pork they are certain
to become a popular item on
your glimmer menu. Accom-
panied by potatoes and corn -
on -the cob cooked on the grill,
these patties can turn a simple
barbecue into an unexpected
experience.
For your barbecuing pleasure
this summer, Food Advisory
Services, Agriculture Canada,
provide recipes for "Turkey
Burgers", "Pork Burgers" and
good old "Beef Burgers".
Suggestion; foi especially good

BARBECUED
PORK BUROERe
1 1/2 pounds, lean minced pork
112 cup -finely -chopped onion
3 tablespoons parsley
1/2 teaspoon thyme
1 teaspoon salt
1/4 teaspoon pepper
1 cup soft bread crumbs
1/2 cup milk
1 ISIP
Mix first 6 ingredients. Soak
bread crumbs in milk 5
minutes. Combine egg and add
to meat mixture, blending well.
Shape in "`8 patties 1/2 inch
thick. Place on a greased grill 3
inches from coals and barbecue
to well done (about 5 minutes
each side). Serve on hamburger
buns with barbecue sauce or
spicy applesauce.
TURKEY BURGERS
3 cups finely ground, cooked
turkey
1 cup soft bread crumbs
1 teaspoon salt
Dash pepper
1 teaspoon paprika
1 teaspoon monosodium
glutamate
1 teaspoon poultry seasoning
4 eggs
1/4 cup tomato juice
2 tablespoons fat
-Combine first 10 ingredients
and shape in 8 patties 1/2 inch
thick. Place on greased grill 3
inches from coals. Cook 2 to 3
minutes each side. Serve on
hamburger buns with cranberry
sauce. 8 servings.
BEEFBURGERS
1 1/2 pounds minced beef
2 beaten eggs
1/2 cup chopped onion
2 tablespoons milk
2 teaspoons Worcestershire
sauce
3/4 teaspoon salt
1/4 teaspoon pepper
Oil
Mix beef with eggs, onion;
milk and seasonings. Shape,,,in
6 large patties and brush each
patty with oil. Place on greased
grill 5 inches from coals. Cook
4 to 5 minutes each side for
medium .and 7 to 8 minutes for
well-done. Serve on hamburger
buns with horseradish, sliced
tomatoes and thinly sliced
pickles. 6 servings.
