Zoethout and class These' menus and recipes feature skim milk powder as this is the lowest cost protein food available (13c qt.). If skim milk powder is used 'as a beverage it should be ser- ved cold and Mixed in_,,the proportions recommended by the manufacturer. It may also be more readily accepted by the family if it is mixed half and half with fresh milk. The other protein sources are cheese and fish. Cheese is a concentrated food and thero is no waste. The frozen fish fillets also have no wast€. These recipes are designed with the working mother in mind. The lunch casseroles could be • prepared the night before and simply placed in the oven -at meal time. * recipes'in- cluded. Breakfast: • Vitaminized Ar Ile Juice, whole grained or enriched cereal with milk. Whole grained toast with butter or margarine, tea. coffee or cocoa. or Fruit Nog * cinnamon toast, Tea or Coffee. n Lunch: Savory Macaroni with wieners or cheese " or Teen Bean Bake Assorted relishes or tossed salad. Fresh apples, bran muf- fins, milk. Dinner: Tomato Juice Baked Fillets Piquant~* or Broiled Smelt Baked Potatoes Green Beans Orange Whip * with Custard Sauce* Tea, Coffee or. ,Milk FRUIT NOG For each serving place in a blender or mixer, 1/2 cup orange juice 1/2 cup skim milk 1 egg sugar if desired Blend until all ingredients are combined and fruit nog is frothy - an instant' breakfast • Savory Macaroni with Wieners or Cheese small diced onion 2 tbsp. fat 3 tbsp. flour 1 tsp.. salt dash of pepper 1 tsp. chili powder (if desired) 11" tsp. dry mustard 1 bay leaf dash of sage 1 can tomato) soup (10 oz.) + 5 oz: water 18 ' oi. -pkg. macaroni 1 lb. wieners. or 11./2 cups grated cheese . Melt fat, saute onions, add flour and seasonings and blend. Add tomato soup -and water . and cook until smooth and thick stirring constantly. Cook macaroni in boiling salted water until tender -Drain. Place macaroni in large casserole, top with- slit ' wieners : -ar'-cheese: - Pour tomato sauce over top. Cover cas. erole. Bake in a 350'F oven for 20 min. Serve 6. Cost is approximately $1.10 .if made with wieners and 80c if made with cheese. 'Topping .11s, cup sifted all-purpose flour 2 tsp white sugar 1i4 tsp. baking powder 1/2 tsp. salt. TEEN BEAN BAKE 4 wieners cut in 1l2" pieces 1 (16 oz.') can baked beans '14 cup ketchup 114 cup water 2 tsp. prepared mustard 1' 1 cup corn meal 1 egg slightly beaten 1,.1 cup milk (skim) 2 tbsp. melted shortening or salad oil „ 2 tbsp. minced onion Greese an 8" x 8" pan or a 11,2 .qt.- casserole. Combine wieners, beans, ketchup, water and mustard in greased pan. Sift together flour, suga r, baking powder and salt into large bowl. Stir in corn meal. Add egg, milk, shortening and onion all at once to dry ingredients. Stir just to com- bine. Spoon over beans in baking pan. Bake at 400°F 35 to 40 minutes. Serves 4 or 5. Cost is approximately 75c. A tea biscuit topping could he substituted for the cornmeal topping and to save time a mix could be used at veru little ex- tra cost. BAKED FILLETS PIQUANTS At current .prices Boston I3lue,Fish ('od and Perch in the frozen ' form are the ►nost economical choices for this recipe ((65c 79c' per 1b.) ,'"cup bread crumbs 1 lb. fillets 1{ = tbsp. vinegar 1 tbsp. \\ orcestershire sauce 1'2 .tbsp. lemon iuice '114 Cup melted butter • or -margarine 1/2 tsp. prepared 1:' tsp. salt 11' tsp. pepper Sprinkle bottom of a greased shallow baking dish with bread crumbs: Wipe fish with a darnp cloth and place in the dish. 'Mix together retraining ingredients and pour over the fish. Sprinkle with pailrika and baste several times. Bake in 450°F oven 10 min. per inch for fresh fish and 20 min. per inch for frozen fish. Serves 4, ORANGE WHIP 112 cup ice -.cold water 1 tbsp. lemon juice I cup skim milk powder few grains salt 1'2 cup sugar' 3 to 4 tbsp. frozen concentrated orange juice or 2/.1 cup fresh orange juice and 114 tsp. grated. orange rind Measure water and lemon juice into a deep glass mixing bowl. Add skim milk powder and salt and blend well. Beat with a rotary beater or an. elec- tric mixer •(medium high speed) until mixture stands in firm peaks - about •5 min. Gradually beat in sugar, then orange juice. When adding grated rind beat only long enough to com- bine.6 servings. mustard I AM RESPONSIBLE. (staff photo) SouthStorm Sewer causes waves at Town C:�uncil A West «rawanosh resident who is interested in the South Storer Sewer in Goderich on behalf of a . member of his family claims Council for The Town of Giiderich is proceeding illegally with regard to •the Project., Norman Wightman says the drain has been init•ated illegally and adds that vhile council has. requested the engineers for Todgham d Case Limited to adjust the assessments for one -home one - lot owners so that'no one pays more than $25, that is also 'illegal. Wightman wrote t(I Todgham and Case with respect to- this matter, it was learned at the meeting. A letter was read to members of Town Council last week from Todgham and Case. Engineer Todgham wrote ,that "respon=' sihility for assessing .the. cost under The Drainage Act, lies entirely with the Engineer and rust he very careful to main- tain complete freedom • in this regard since, if an , owner should appeal to 'the County Judge against his assessment, and if it could be shown that the Engineer did not exercise his independent judgement in making the assessment, . the Judge might well deal harshly with the Engineer and the Muni ipalitv'':• "Similarly, if • it could he shown that- the Engineer did not exercise his independent judgment, this might well he a ground for an appeal to the Referee against the project and could, conceivably, result in up- setting the whole procedure," the letter continued. In addition to this, these fan - downers must pay completely the $11,130 which' was to he transferred from t he assessments of '118 landowners in section "E". "The remaining $7,95( assessment from "E:" Was to be added to the general levy along with the entire , $4,370 assessment from 437 lan- downers in section 1). The tri landowners • will be paying a share of this in town levy . On top of this these 25 landowners are required to pay a share of all other sewers which are on town levy. "Summing this up briefly: "1. These 25 landowners are asked to pay completely their share in South Storm' Sewer. "2. 'They are also asked to Pay- the share of :318 TAn= downers in section E. ".3. They are asked to pay their share of all the assessments of 437 landowners in section D which would .be placed on town levy. ".1. They are expected to help pay $for all other sewers within the town. "A report- was 'issued a couple of months ago listing the cost Of, the major landowners in% (dyed in South Storm Sewer. Then a meeting was held to present this report and to get the feeling of these' 25 lan- downers on construction of the sewer under Drainage Act. "The ' council received, a petition signed•hy all hut'two of these landowners stating they were not in favor of it. In spite of this council decided at a ,committee meeting at which :not one of these people in- k•olved was .present to go ahead with the sewer under The Drainage Act anyway. "It is not just , that lan downers assessed for the south Storni Sewer • should pay for their"sliare of the sewer under the i)rainage 'Act with no assistance, plus help to pay for other sewer projects in • the town levy. - ''The Council is instructing the engineers . to reduce all assessments of the 318 -people in section E who were assessed $6(). Their assessment would be reduced to $25 each. This amount would he put into the general levy, a total of $7,950.00. "The 25 major landowners who are already assessed, will pay for the ,remaining $35 for each of the :318 people in sec- tion - E which comes to $11,1:30.00 which is to he divided among these 25 lan- downers.
