The high .seas may be geagraphicelly far away, b.ut even on
a one -day voyage you, your mateq and crew are bound to got
hungry!
When you plan a day or overnight outing; on land or water,
make 'sure you visit your baker the day before. Heil outfit you
with good eating fun.
Don't forget a mid-morning snack -- bran muffins are nice
and chocolate chip and peanut butter cookies fqr afternoon.
Lunch should be easily arranged, easy to serye and good
tasting.
Make up assorted sandwiches using various kinds of breads
and roils at home'or package all the ingredients in plastic con-
tainers and let the crew make, their own. Take a. good variety
of•interesting fillings to satisfy their appetites. •

doughnuts, plain cakes or fruit pies, processed or aged cheeses
(not cream or cottage)9 cured or pickled meats, preferably not
sliced until eating time; whole, hard-boiled eggs;. peanut but-
ter,; pickles; jams or marmalade: washed, fruits with skins on;
cleaned raw vegetables and all commercially canned foods
which are opened at meal time.
Poor travellers are milk, cream and all foods containing
them, fresh meat, poultry and fish especially if chopped or
minced; chopped, marinated salad mixtures; desserts with
cream or'cream-type fillings.
The best foods for freezing are bread and rolls, plain cakes
and cookies, sliced meats and poultry, fish, processed cheese,
nut and fruit pies.
When taking sandwiches on a picnic freeze them and pack
them still frozen so that they thaw en- route. Always use fresh
foods for freezing since foods will come out of the freezer only
as fresh as they go in.

Digby Scallops are world famous: They are most popular
french -fried. Of course, they are first dipped and then rolled
in bread crumbs for a delicious dish.
Cranberries were put to very good use by the Indians of our
lands. 'They treated wounds frorh poisoned arrows with cran-
berry dressing. Squaws used the cranberrry to brighten
up their •foods, but also as a dye for rugs and blankets. The
settlers soon learned many uses forthis bright red berry', from
the Indians.
Cranberry Glazed Rolls
1/4 cup chopped walnuts V/4 cup brown sugar
1 cup jellied cranberry saucp 6-8 brown 'n' serve rolls
Nova Scotia, called Acadia by the French, is a fortunate
province is it has many foods very close at hand.,Fresh and
salt water fish, especially shellfish, fruit (the Annapolis Valley
is famous for apples, wild strawberries, cranberries), maple
syrup, fresh vegetables and dairy prodUctd.
The French, Scottish and German settlers who came to this
province soon learned to ,adapt their recipes to the local foods.
Nova Scotia now has a varied cuisine.
EaCh of the three nationalities came for various reasons and
all managed to maintain' some of their own culture and food
Grease muffin tins or custard cups, sprinkle a few pieces of
nuts into each.
Blend cranberry sauce and brown sugar, put a tablespoon of
mixture in each cup.
Turn rolls upside down and press'into each cup.
Bake at 400°F 12 to 15 minutes.
Let°cool 4 - 5 minutes, invert pars and gently remove rolls.
Digby Scallops •
The amount of ingredients required will depend on the number
of scallops you have, but the general method is to roll each
ogre in flour, dip in beaten eggs, roll in dry bread crumbs,
seasoned if desired and deep fat fryrat 375°F for 3 to 4 minutes
or until done.
Baked Scallops
1 cup fine bread crumbs 1 egg. beaten
popper 2 tablespoons water
cayenne 4 tablespoons melted butter
1/2 teaspoon Salt 11/2 pounds scallops
Nth( ,first 4 ingredients together. Com'oine egg .and water. Dip
each scallop in crumbs then egg then crumbs:
Place in baking ,dish, let stand 30 minutes for coating to set.
Pleur melted butter over scallops and bake in a 450°F oven 30
minutes brunt!' crisp and brown.
Serve your sdallops,,with Tartar•Sauce,
Rasytetilar SAUCE)
1 cup Mayonnaise 1/2 tablespoon chopped capers
ti tablespoon chopped olive 1/2 tablespoon parsley
fix tablespoon chopped pickles chopped fine
er pickle relish few drops onion juice
