Mo CEREAL FLAKES MUFFINS 11/4 cups sifted all-purpose flour 2 teaspoons double-acting baking powder 1/2 teaspoon salt • '/a cup butter 1/2 cup firmly packed brown sugar 2 eggs 1 cup grape -nut flakes "1/2 cup milk 1 teaspoon. vanilla _Sift flour with baking powder and salt. Cream but R 1 • Gradually blend in sugar. Add eggs one at a time, beating well. Mix in cereal. Combine milk and vanilla, Add flour mixture alternately with milk, stirring just enough to moisten all flour. Divide the batter' among 18 medium-size muffin pans which have ,been well greased on the bottom only. Bake at 400° for about, 15 minutes, or until muf- fins spring back when lightly touched. Cut in shortening until • w .9 KUCHEN mixture is crumbly..Add cereal; measure 1/2 cup of the mixturee; set aside to use as topping. Add instant, coffee to remaining°fl'our mixture. Stir in milk and egg; blend thoroughly. Pour into greased 9 -inch square pan. Sprinkle mixture reserved for topping on batter; then sprinkle ,with, pecans. Bake at 375° for 25 to 30 'minutes. Serve warm. Makes 12 servings. Note cooled, wrapped in aluminum foil, and frozen. Before serving, thaw and reheatin overt, And to go with it Some grape, plum jeIiy 3 cups prepared juice (about 1.1/2 pounds fully ripe Concord grapes and 11/2 pounds fully ripe plums) 6 cups (2 pounds 10 ounces) sugar • '1/4 cup water 1 box powdered fruit pectin First prepare •Phe containers. Use, only containers 1 pint or less in size 'that. have tight- fitting lids. Wash, scald, and drain containers and lids; or use automatic dishwasher with really hot (150° or hig,,her) rinse water. , Then prepare the juice. Thoroughly crush, one layer at a time, about 1J/2 pounds Con- cord grapes. Place 'crushed fruit in jelly cloth 6r bag and squeeze out .juice. Measure 11/2 cups into large bowl or pan. Pit (do not peel) about 11/2 pounds plums, Chop very 'fine; .then place in jelly cloth or bag and squeeze out juice. Measure 11/2 cups into bowl with the grape juice. Then make the jelly. Add sukar to juice and mix well, let stand 10 minutes. Combine water and powdered fruit pectin in small saucepan. Bring to a boil and boil 1 minute, stirring constantly. Stir. into • the juices. Continue stirring about 3 minutes. (A few sugar crystals will remain.) Quickly pour, into containers. Cover at once with tight lids. Let stand at room temperature until set (may take up to 24 hours); then store in freezer. If jolly will be used within 2 or 3 weeks, it may be stored in the refrigerator. Makes 8 medium .glasses.
