report
'the Ontariq °Wheat
Producers' Iviarketing Board
released figures this week
indicating it has purchased
nearly five million bushels of
1972 crop vheat to date.
Marketing board chairman, *-
William Brander, R.R.8,
Mississauga, said following a
Tuesday, August 29th, the figure
represents a volume of about 1.4
million bushels greater than
that Purchased by the board -one
year ago.
Reflecting extremely poor
harvest weather in Central and
Eastern areas of the' province,
the board has been required to
purchase :334,000 bushels of low'
grade saouted wheat to date.
With ha'rvest still to be
cornpleted in Eastern Ontario,.
the 'sprouted volume of wheat

crease.
Mr. Brander said gales of
board owned stocks to date
amount to 992;000 bushels;
leaxing- a net ba‘lance of,
4,025,000 -bushels on hand. The
sales have all been made to
overgeas marketS.,
The board chairman also
advised that some difficulty has
occurredin forward movement
of board stocks into the St.
Lawrence terminal storage
elevator system because of
facilities being under pressure

these recipes from the Canadian
Dairy Foods Service Bureau
make use of European type
cheeses now produced in
Canada. Hot or cold, cheese

flavor with little effort.
Tomatoes Vinaigrette carry the
benefit, of that make -ahead
magic. Slices of tomatoes and
mild Spanish onion marinate in
an Italian style dressing accen-
ted with the piquant flavor of
Canadian Parmesan cheese:
They're perfect' for cold suppers
or light lunches.
TOMATO.ES VINAIGRETTE
(Makes.6 to 8 Servings) "
4 large 'beefsteak tomatoes
1 small spanish onion, thinly
sliced
1 cup salad oil
1/2„ cup white wine Vinegar
'1/2 Cup grated Canadian Par-
mesan cheese
1 teaspoon oregano
1 teaspoon salt
1/2 teaspoon sugar
1 / 4 teaspoon. garlic 'powder
lettuce leaves
chopped parsley.
Cut tomatoes inio 1 I/27inch
slites. 'Arrange tomato and
oniOn slices alternately in a
large shallow dish. In a jar com-
bine salad oil, vinegar, cheese,
oregano, salt, sugar and garlic
powder. Shake vigorously to mix
well.' Pour over prepared
vegetables and marinate
covered in refrigerator for at
least 4 hours. Baste dc-
casionally. To serve drain
tomato and onion slices, arrange
on lettuce leaves and sprinkle,
with -chopped • parsley. Serve
virith remaining dressing.
For Broiled , Tomatoes Au
Gratin, thickly sliced tomatoes
are topped with shredded
Canadian -made prodess Swiss
cheese Wended' with buttered
.crumbs, then 'broiled until
golden. The flavors melt and
mingle beautifully. They make a
colorful, -flavorful accom-
paniment to steaks or fried
chicken.
BROILED TOMATOES
AUGRATIN
(Makes 4 or 5 servings) (9 slices)
3 large beefsteak tomatoes
.11/2 cups shredded Canadian -
made process Swiss cheese slices
1 cup fine dry bread crumbs
10 cup butUrs melted
1 / 2 teaspoon ;basil
1 / 2 teaspoon salt
Cut each tomato into three thick
slices. Place in a shallow glass
baking dish or broiler pan. Com-
bine cheese, bread crumbs, but-
ter, basil and salt. Sprinkle over
each slice, Broil 5 to 7 minutes
or until cheese is melted and
crumbs are golden. Serve im-
mediately.

Mr. Brander said, however,
that stocks have been'moved to
Baie Comeau and Port Cartier
to meet outstanding export
commitments. Other stocks are
-located.. at, Montreal, Kingston,
Port Colborne, Port Stanley,
'Wallaceburg, '
Sarnia and Goderich.
Of further concern to the
•marketing board directors,
according to Mr. Brander, are
the stocks ofsprouted wheat
owned by the board which are of
feed quality.
Mr. Brander said the board is
hopeful these stocks and
possible additional purchases of
sprouted wheat will Move into
feed markets in Quebec, the
Maritimes or "export markets.
In this regard, the board
-plans to .ineet with
representatives of the Canadian
Livestock Feed' Board in the
near future to initiate
discusgions on .the feed market
requirements in Quebec and the
Maritimes and the potential for
utilization of Ontario, wheat.
Feed freight assistance which
applies to western feed grains
moving to Eastern Canada
'areas does not apply to Ontario
wheat at present and'this'aspect
will also be discussed with the
Canadian Livestock Feed
Board, .ccordin to M-rr-
Brander.
In other business at the board
meeting, plans were finalized for
the annual meeting of Ontario
wheat producers to be held
October 2n):1 in Kingston. Mr.
Brander 'advised that all,'
producers will be receiving a
notice of the meeting in the near
future, along with a copy of the
marketing board's auditor's
report and &ancial staternent
for the yea lt operations just
completed. "

OR BEEF BIRDS Serves 6 with mixture of:
• 11/2 pounds round steak, cut
—.into 6 *slices, pounded thin
1 teaspoon -salt
1/4: teaspoon -pepper
dash' marjoram
e small cooking onions
flour .
, 2 tablespoons vegetable oil
1 20 -ounce can tomatoes or
tomato sauce
2 tablespoons horseradish
Method:
• Season meat, place an onion
on each slice, roll up, secure
with toothpicks;
• Roll in flour;
• Brown in hot oil, pour off fat;
• Addremaining ingredients,

3/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon oregano
• Roll up and secure with tooth-
picks;
• Brown in hot oil, season to
taste;
• Add 11/2 dupe neef brOth,
cover, cook until tender, 1
hour.

1/3 Cup soft shortening
1/2 cup sugar'
1 egg
1/2 tsp. vanilla
1/2 cup sifted all-purpose flour
1/4 cup cocoa
1/8 tsp. salt
1/4 tsp. baking powder,
1/4 tsp. cinnamon
2/3 Cup chopped nuts
cup pitted dates, cut in large
pieces
• Cream shortening in mixing
bowl until smooth. Add sugar,
egg and vanilla; beat until
creamy and smooth. Sift
remaining dry ingVedients
together then add to shortening
mixture. Beat until well
blended. Stir in nuts and dates.
Drop by teaspoonfuls on lightly
greased cookie sheet.' Bake in
350°P oven for 15-18 minutes.
Cool on rack (cookies will be
soft). Yield; 3 dozen cookies. •
