What about Christmas leftovers?
After the hustle and bustle of
preparing_. and serving the
Christmas dinner, you don't
usually want tQ think about the ,
leftovers. ° But with a little
tanning ahead, any extra .urkey.•

probably won't even notice that
{ It's the same Christmas turkey.
First thing to do, after the
Christmas [Heal is ,.over, is to
remove the stuffing from the
turkey. Package it in foil or
plastic and it can be kept in the
refrigerator up to three days or
° in the freezer up, to a month.
You can save room in the
grige- .tor if you remove the
m• from e turkey carcass
before staring it. If you plan to
use the meat -within three tQ
four days, cover it loose1 and
refrigerate it.. Otherwise, the
turkey can be sliced r chopped
and wrapped` well in foil or
plastic and frozeri..Plain turkey
slices or pieces can be kept one
month in the freezer without

TURKEY CREPES
Crepe Batter
2 3.Lup flour
'4 teaspoon salt
1 tablespoon sugar
4 beaten eggs • ,

2 tablespoons melted butter
Sift dry ingredients. Combine'
eggs with milk and .gradually
beat into dry ingredients until
batter is smooth. Stir in butter.
Chill batter two hours. Brush a
small heavy frying pan with
butter and heat until ,a drop of
water "sizzles". Pour a small
amount of batter (2 to 3

bottom. Cook over medium heat
until lightly browned. ,on. one .

CHEESE SAUCE

2 tablespoons flour

' teaspoon dry mustard
Dash paprika

cheddar cheese
Melt butter, blend. in flour .
and seasonings. Gradually add
milk. Stir and cook until' smooth
and thick. Add cheese and stir
until melted. Makes about 11/2

a cup finely chopped onion
a cup finely chopped celery
2 tabreSpoons'butter

Saute onion' and celery in
butter until onion is transparent

crumbs

1 (15 -ounce) package . frozen
raspberries
1 tablespoon sugar
41•-2 teaspoons cornstarch

milted butter and combine
thoroughly. Press evenly in

plate. Chill thoroughly,.
LINE pie -shell -with vanilla ice
cream; f=reeze. Add lime sherbet,
packing down lightly. Store,

1 tin (14' ounces) apricot halves,

pineapple, well drained
Green food coloring

Slivered toasted almonds for

MAKE a l.U,anch angel cake

WHIP cream until stiff. Fold
''2 cup into the pineapple (tint a•
delicate green); and ' 2 cup into
the jam
SPLIT 'cake into four . equal
layers. On bottom layer, spread
apricot filling. Place second cake

PLACE third cake layer on
top, spread with jam filling; top
with last cake layer.
SPREAD top and sides with
remaining cream; sprinkle edge.
with almond slivers. Chill well
