On November" 16 a meeting
of Beta Sigma Phi was held a
Victoria and Grey Trust Co.
with,,13 mem bers present,
The minutes of the previous
meeting. were ,approved as, read*.
The vice-president, Dorothy
Feagan, thanked all the m tubers
for their support duringshing
which had been -quite successful
with five -hew girls joining. These
girls will join sorority officially
at the Pledge Dinner at the end
° of the month.
The treasurer's report was
adopted as read.

HOLLAND CHEESE BISCUITS
11/2 cups shredded imported
'Holland Edam or Gouda (6 oz.)
2 cups all-purpose flour'"
4 teaspoons baking powder
2 teaspoons sugar ,w
l ''teaspoon salt
3 tablespoons'- butter = - or -
margarine - < `
3/4-1stip milk
Mix shredded -imported
Holland cheese with dry
ingredients. Cut solid butter or
margarine into dry ingredients
with a pastry blender until

mixture is the texture of coarse
meal. Make a well in the centre
of the mixture then add milk all
at once. Stir quickly to form
(lough.- •
—Tura the dough onto a
floured board. Knead 10-12
times. I't down and 'rbll lightly
with a flouted polling pin t6' 1
inch thick. Cut with buiscuit
cutter dipped in flour.. :,Place
biscuits on lightly greased baking
sheet. Brush tops with melted
butter if desired. Bake 12-15
minutes in 425 deg. F . oven.
Makes two dozer, buiscui-s, 11.

surface roll the biscuit dough

About a week later, I take it
out, unwrap, it and repeat the
process. I do that several times
before Christmas.
A day or so before Christmas,
I either put a fancy frosting and-
decorations- on the cake. to
personalize, it • or f glaze it
with something special, dotting
it with all kinds of fruits and
nuts.
When I take it 'to••thetable. on
Christmas, I have a masterpiece
— moist and distinctive tasting
with the individuality you like
, to have at your Christmas table.
I follow the same idea for
cookies. I 'buy several kinds of
cookies — just plain — and
decorate them myself with
Christmas motifs.

As 'early as the Christmas
. cakes start appearing in the local
grocery stores, I buy mine, I
don't get an expensive one. Just
about any fruit cake will do
nicely.
I. take- it home and unwrap,
"I place it on a large piece of tin
foil and reach into the cupboard
for a bottle of • fruit ?brandy
(there, are a hundred and one
different•things you can use) and
- I pour. about two or three
capfuls over the cake. Then 1
wrap, the cake tightly--tnfoil,

The Extension .Ofticer,
Larraine Baechler, announced
that she had.rcceived two letters
from international announcing
that there wore two girls residing
in Kincardine who were
members and would be
interested in joining a chapter
there if we,,lnrished to start one.
This subject after much
discussion was left to Larraine's
committee to look into further
and report back at a later date.
All ways and means draw
tickets were handed in and the
draw held. The winner of the
$35 gift certificate was ' T.
Connelly, Britannia Rd.,
Goderich and the $15 certificate
was won by Paul Carroll, Wilson
St., Goderich.
The service committee
chairman, Pat Spence, received a
thank you note from the
Children's Aid Society for the
Christmas Gift Tags and hoped
the girls would make more if
they had some old Christmas
cards. She had' received,a thank
you letter from the General
Hospital for toy,,s donated. The
members decided on the date of
December -16 --for----the-- gift
wrapping night of gifts for the
,patients at the Ontario Hospital.
